A non-muslim should behave in a way suggested by their own religion, beliefs or scholars. Surely a muslim will not incur any 'gunah' from the deeds of anyone, including a non-muslim.

I have no evidence to suggest or otherwise if a muslim should accept such greetings from a non-muslim. However, I heard a scholar once say that if a non-muslim says "Assalam O Alaikum" to you, then a muslim should just reply "Walaikum" (and to miss out the 'peace' part). This is probably because this is a strictly Islamic greeting.

You have heard correct. The peace the salam is from Allah (sbwt). And it is not on non-believers. It is not permissible to say the Salam to non-Muslims nor to answer their salams.
