ok…so according to the shan masala packet you add wheat flour (atta?) in the nihari after it has been cookin for 8 hours and alot of the recipes on GS say you add in maida (bleached flour?) and that too in the beginning of the cooking process. soo which one is it? any tried and tested recipes?

Its the wheat flour (atta)...I always add that.

Someone advised to use bhoonafied maida in a previous thread. It works VERY well. U dry roast the flour in a pan first until it slightly changes colour. Then mix in a paste. I usually put mine in near the end of the cooking, but I don't think it should make much different whenver. Only thing is, if u put it in near the end, there is less chance of it burning.
