i use fish sauce regularly when making thai fried rice and pad thai. are you worried about the fishy odor? coz it mellows out quite a bit, only smells fishy in concentrated form. just make sure you buy the best grade, and not the cheap stuff coz they can be nasty. squid brand is the best.

fish sauce depends why your subsitute it , to go vegetarian or remove the smell.

Use Braggs Amino Liquid which is made from fremented soy paste. Add 2TBSP of the Braggs Amino Liquid with a little soy sauce and sugar.

Mix 2TBSP of Miso(try out different strengths) or Jiang paste with salt (or a little soy sauce) and sugar.

Vegetarian Fish Sauce Substitute
(from the Sundays at Moosewood cookbook)
make a strong vegetable stock that is heavy on onions and black peppercorns. for each 2 tbsp of fish sauce called for, substitute 2 tbsp. of the stock plus 1/2 to 1 tsp. of salt.
No offense to Moosewood but I would suggest one of the fermented soy bean menthods since an intense salty fermented taste is what fish sauce is used for....also fermented soy products have a nice kick of umami.
So for my Final Suggestion...(drum roll please)
Use the first method but add
Dried Shiitake Mushrooms to the Braggs Amino Liquid and let soak for a while...the dried mushrooms add a double kick of Umami

Id go for 2 parts soy sauce and 1 part lime juice in a hurry. Or Marmite.

yeah i am going to use it for pad thai, i don't want to go with soy sauce cauz it is no where close to fish sauce...

2 days ago I saw that show 'throwdown' on food network about pad thai and I want to try it...but I need a tried and tested recipe..please share if u have it...:)

^^ haha, I saw it too and I am going to try it based on what I saw, lets hope it turns out ok. Actually my big issue was how to cook the noodles and now the mystery has somewhat been resolved :D

pad thai recipes are pretty standard though. the trick is all in the mise en place; and once you start the wok, you have to be quick.

I use fish sauce, it's a type called nam pla.... really makes a difference to thai cooking :)

Ok, my pad thai is almost done. I think this is the first and probably the last time I am making it using the fish sauce....man that fish sauce has some serious smell...lol..
Now please, queer and maroush how do you get rid of that smell? lol
i got this fish sauce and its called anchovy fish sauce...is it the regular fish sauce or something with an add-on?
