Muzna, I'm sure you know that there are many many ways to prepare the filling.And basically it depends on your choice of ingredients and likes/dislikes....
I'll tell you my way of preparing the stuffing/filling....and I'm just writing the estimated amounts....as i tend to 'eye' the ingredients n don't actually measure everything the proper way.
Ingredients:
Mince (chicken/mutton...I like mutton better) 1/2 kg
Garlic 1tsp.
Ginger 1 tsp.
Onion 1 small
salt 1 tsp
Red chilli powder 1/2 tsp.
black pepper 1/2 tsp.
Cumin seeds 1 tsp.
Oil 2-3 Tbsp.
Green chilli 2-3
yoghurt 2 Tbsp.
Spring onion if desired
Fenugreek leaves (dry methi) 2-3 tsp.
Method:
Add ginger garlic (crushed) onion (chopped) to mince ...add a bit of water n cook till it changes its colour. now add salt, red chilli, black pepper n yoghurtn let it cook until mince is done n water is dried up. Now add oil green chillies (chopped)n cumin n cook a bit more (bhoonify) Just towards the end crush dried fenugreek leaves between your palms n add to it. Remove from stove.
Chop spring onion (if you like) n add to mixture ONLY when its cool.....adding to hot mince will just make it go soggy.
Fill your samosa wraps with this n fry.

what is the difference b/w warqi samosas and regular samosa?

^^ warqi are more crispy layered samosas....the small samosas are knows as warqi. Where as the other ones are more considered "khasta".

I made some small samosas this weekend too, and they turned out great...
Filling:
chicken mince 400 grm
ginger-garlic paste 1 tsp
Ajinomoto - 1 tsp
soya sauce 1 tbsp
shan tikka masala - 1 tsp
Black pepper - just a dash
red chilli powder 1/4 tsp (or maybe less than that)
cook and Fry these ingredients together in a little oil
When done, keep aside and let it cool.
then add:
1 onion finely chopped
fresh corriender 1/2 cup chopped
green chilli finely chopped - 3-4
chedder cheese - 1 cup shredded
mix these ingredients with the mince and fill in the wrappers
You dont need to put any salt because the tikka masala, soya sauce and chedder cheese are already saltish.

Muza u can makes vagetables samosas as well or paneer samosa too,thats defferant and good in taste.
For vagetable samosas u fry ,sherreded carrots ,cabbage ,chopped frozen peas and corns and fry them for few mins in little oil,add salt,balck peppers,redchilli powder ,soya sauce,lemon juice,chatt masala and mix it well when it cool down add little chadder cheese in it ,it taste so good.
paneer samosas
cootage cheeese one cup u can buy use readymade cootage cheese or u can make your own too by heating laben or dahi when it boil u will darin the water from it and use it.
almonds chopped 2tbs
garlic chopped 1tbs
green corriander chooped 2tbs and green chillies chopped 1 or 2
little salt as cheese is salty too,balck peppers
mix all ingerdiants and fill samosas,ithis mix will be enough for 12 samosas.
