Your first statement is correct but PST is 5 hours ahead (not behind) of GMT

so time difference between EST and PST is 10 hours or EST–5–GMT–5-- PST = 5+5=10 hours

Pretty sure you have to take Absolute value for EST, GMT and PST to get correct results.
