CALGARY (CP) - In the heart of cattle country, where beef is king,** a city entomologist imagines a future where a hamburger might be a minced beetle patty served with special sauce.**
While Rob Longair maintains that he does not want to rattle any chains in the cattle industry, the University of Calgary bug expert says insects make good eating and need to be seriously considered as a food source.
“I didn’t say better than beef, I said as good as beef,” explained Longair. “There is lots of protein, essential nutrients, amino acids and less fat in insects than in many other types of food, like ground beef, but culturally there is a bias against eating insects. People think of it as yucky and absolutely horrible.”
Insects are part of a daily diet in other parts of the world and have many advantages over the meatier species North Americans prefer, Longair said.
“How many people like oysters or lobster?” he said. “Oysters filter garbage and crap and I don’t think it has a texture that most would find positive and lobsters sit down at the bottom of the ocean tearing up dead fish.”
Longair pointed out that, if bugs were eaten, it may solve some of the pest problems that plague prairie farmers. **“Just look at all the grasshoppers in eastern Alberta this summer.
