but also the hubs' family makes this fantastic dip out of eggplant... it called "vienneta" slice big eggplants in half and place on bbq until roasted. then remove the flesh from the skin, and using one of those hand blenders, mush it up. add mayo and a bit of salt and it makes this amazing spread! it tastes really good on bread.
if you dont have a bbq or its not bbq season yet, you can also put the eggplants on a big baking dish (depending on eggplant size) and put them in the oven at 400.

EGGPLANTS WITH RAISINS:
INGREDIENTS:
=eggplants…1 pound approx,peeled and cut into cubes
=onion…1 medium chopped
=tomatoes…2 chopped
=whole green chiliies…if u like ur food to be extra spicy,otherwise just skip 'em…i sometimes use the loooong ones,which are not at all spicy
=salt…acc to taste
=black pepper…acc to taste,but i’d say almost 1/2 tsp i think
=raisins…almost half a cup
=white vinegar…2 tablespoons
METHOD:
1)in a pan heat some cooking oil and add the cubed eggplants.cook them on medium high heat with constant stirring(as they will tend to stick to the bottom)…cook till they are well cooked,but still have their shape.I’d say it will take 10 mins or so.remove them from the pot and keep aside.
2)in the same left over oil ,add the chopped onions and stir fry for a while,add the tomatoes and green chillies and salt and pepper and cook for a few mins till the water from the tomatoes evaporates.add the raisins and the eggplants and vinegar and put on low heat,covered for almost 10 to 15 mins.serve…!!!

my recipe for baba ganoush is similar.
bbq one large eggplant and roast a few cloves of garlic.
separate the eggplant flesh from the skin and add it into a blender along with the roasted garlic, 1 tsp tahini, 2 tsp yoghurt, dash of lemon juice, some salt, black pepper and a little parsley. blend it all to a smooth paste.
*be careful with the tahini, it can be overwhelming. add only a little at first and then adjust according to ur taste preference.

eggplant ki bayhud mazaydar dish hai..even my husband jo k gosht k shokeen hain unko b yeh dish buhut pasand hai aur ager achay say bnaao to dish ka akhri kutra b khaya jata hai..
buss masala bhoon kur eggplant daal do. rounds mai kaat kur..phir daalo yogurt (thick) 1 cup spread kr daina hai aur us pur lemon ka juice sprinkle kr do..and cover..jub yogurt ka pani dry hojaye to nikal lo with care..khaao roti k sath wo b tandoor wali! its simply amazing!
