I love eggs. (Thank goodness my cholesterol level is low). I can eat eggs every day for breakfast, lunch and dinner. My most favorite preparation is andey ki bhujia. This is how I make it. Will post pics of it tomorrow.
1 egg
1/4 red onion
2 green onions
1/2 tomato
2 green chillies or 1 jalapeño
a small piece of green bell pepper
2 mushrooms sliced
salt
chili powder or black pepper
Chop all the ingredients, fry in 1 tbs olive oil until mushy, add egg, scramble it and mix it in. If you don’t have all the veggies, just use what you have.
It is so mouthwatering, finger licking good! Please do try it :)!
1- Two eggs , add a dash of milk , quarter tsp icing sugar .. give it a very light whisk. Keep aside
2- Next, prepare green chilli mix or red chilli mix what ever your taste is like .. finely chop the chillies, add a pinch of fresh basil, a few drops of lemon juice, one tsp chopped spring onion, half tsp fresh corriander paste .. mix it all and keep aside
3- Shred loads of cheese finely, add salt and keep aside ..
putting the Ome together:
Heat the pan add butter until it foams up .. drop the egg mixture in, sprinkle salt and black pepper to taste... wait for it to nicely settle, keep the heat medium ..spread the chilli sauce on the omelette and finally the cheese .. fold it carefully in half or two halves.. then flip it .. let it cook for a couple of quick minutes or until you feel the cheese is starting to melt ..

Exact same as yours, only instead of mushrooms I add aloos.
Anyone tried Egg salan .. basically its Eggs cooked the desi way .. and comes out delish , I have always loved it with paratha , though husband doesnt like it much
we fry the onions until brown, add ginger , garlic paste .. bhoon some more .. add the usual spices, salt , red chilli powder, turmeric ... then the tomato paste and bhoon the masala really well .. then if you like potatoes , chop them really fine and add them , when done , add in the green chopped chillies, fresh corriander, garam masala, any other vegies you like and when done, add in 5-6 well whisked eggs .. and stir it all continuously until the eggs are fully done .. finally add a bit more fresh dhaniya and one chopped chilli .. ready to be served ...
aaah and not to forget white channa and eggs that was my shortcut food in good old bachelor days !
Do the above mentioned masala and then add canned channa , give it five minutes and then add in whisked eggs .. stir stir stir .. finally add in chopped cilantro and loads of chopped green chilli and enjoy withGarlic naan ..
I used to puke on eggs when my mother used to make me eat them,when I was young.
I have started to love them now...fried,boiled,scrambled,omelet,aloo anday or khageena thingy..I love them...!!
I sometimes discard the yolks and just use the whites.
Another one I remembered .. Last year we had gazillion pancakes and crumpets left from our shopping spree , so we called over a couple of friends and had a little breakfast party .. I made Sweet Omelette with multiple flavours .. It went really well with the crumpets and pancakes .. so this is what I did :
Whisk a few eggs , add a dash of milk , pinch of baking powder , icing sugar just half tsp .. whisk well and keep aside .. you can add a pinch of cinammon powder or nutmeg powder which ever you like more , if you want to increase the aroma .. in a pan heat butter , pour quarter of this egg mixture and when it settles , pour honey or caramel syrup or pancake syrup on it dil khol kai .. then fold it in half and flip it so that the other side can cook well too ..
We created many different flavours , I even added vanilla drops to one of the portions and it was quite an enjoyable breakfast .. havnt had it in ages .. but will do soon inshallah
interesting... I've made anda ka salan but its basically hard boiled eggs in half added to the salan. Does your salan turn out kind of like egg when you add it to soup?

Stir fry spring onion, green chillies, corriander and spices, add in a little of egg and immediately put a slice of bread on top of it .. when the egg gets cooked on that side , flip the entire slice and let the other side cook .. the egg sort of sticks to the bread and it really does taste different and really nice ..
