egg salad/chicken salad sandwhiches recipe

Hey all!

i am a college student so I am always looking for easy and delicious recipes to make. i have tried a chicken salad sandwhich on my own before and it was pretty good, but never an egg salad sandwhich. so I was wondering if anyone had a recipe that is tested and tried for both egg and chicken, that they absolutely love. If i go through the hassle of buying all the ingredients, i want to make sure i try a recipe that some of you like! Thanks in advance :slight_smile:

I dont understand why u need recipe for an egg salad sandwich. Wouldnt it b the same as the chicken salald except put sliced hard boiled egg in?

Anyhow, i put mayo on both slices of bread, cover with lettuce, sliced tomatoes and cucumber, finely chopped onions, hot pepper sauce and sliced boiled egg.

INGREDIENTS (Nutrition)

  • 8 eggs
  • 1 tablespoon mayonnaise
  • 2 tablespoons prepared Dijon-style mustard
  • 1 teaspoon dried dill weed
  • 1 teaspoon paprika
  • 1/2 red onion, minced
  • salt and pepper to taste


DIRECTIONS

  1. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  2. In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
  3. Serve on bread as a sandwich or over crisp lettuce as a salad.

Cucumbers would be nice to add as well for some extra crunch.

4 Hard-boiled Eggs, peeled and chopped
ΒΌ cup Light Mayonnaise
1 Celery Stalk (no ends or leaves), finely chopped
2 teaspoons Red or Sweet White Onion, finely chopped
1 Β½ teaspoons Lemon Juice (freshly squeezed if possible)
To taste: Salt & Freshly Ground Black Pepper (about 1/8 to 1/4 tsp of each)
Instructions:
Gently toss the eggs and celery together in a medium-size bowl.
In a smaller bowl, combine mayonnaise, lemon juice, onion, salt and pepper. Fold into the eggs and celery. Season to taste with salt & the ground black pepper.
Chill for an hour or so before eating. For each individual serving, spoon 1/2 cup onto a lettuce leaf or spread on bread.

very BORING but very easy--boil an egg--smash with fork, add black pepper, mayo, salt, and sprinkle cajun seasoning:)
