Easy Recpies

Hmm......my quick recipes include:

1) cut a potatoe in really small cubes. Heat oil in a frying pan, add cubed potatoes, salt and red chilli pepper. Cover and cook on slow heat until done. Good with bread. ABout half hour cooking and prep time.

Boil and cook some chicken or keema and keep in fridge for later use

2) BOil some pasta. Drain, add some Ragu, Prego etc and add sliced mushrooms, olives etc(straight from a can) and add the chicken or keema. Heat for a couple mins and serve. Maybe takes 20 mins to prepare.

3) Buy some tostada shells. Heat at 350 degrees for a couple mins. Meanwhile, mix together cooked keema/chicken, taco seasoning, refried beans (from a can), salsa and cheese. Put on top of the tostada shell and bake for a couple mins until the cheese is melted. Can be prepared in less than 15 mins.

4)Beat some eggs. Add sliced spring onion, tomatoes and dhaniya( coriander/cilantro) , salt, pepper and cook in a frying pan. Serve with roti or bread.

Talking about bell peppers, I also have a chinese recipe which I JUST love.
Spicy Chicken

Slice one large chicken breast into strips and cook in a little bit of oil iwth sliced onions and garlic.
If you like vegetables, boil sliced carrots and broccoli florets until tender.
In another pan, mix 1/4th cup of soysauce, 2 tbsp chilli sauce, and abt 2 tbsp sugar/brown sugar.
When the chicken is done, add thinly sliced bell peppers, and cooked carrots and brocolli florets. Add the soysauce mix and simmer for a few mins. If you like the sauce thick, which i personally do, add a little cornflour mixed in water. Simmer until the sauce thicken to desired consistency. Serve with boiled white or jasmine rice.

PS: You can adjust the spices however you like them. This is approximately what I do.

This recipe may sound complicated , but it turns out really good. The original recipe had beef in it but i prefer chicken. Plus i add all the vegetables since this is hte only way i will eat them
