We will freeze rolls, cutlets, kababs and samosay for Ramzan. Are there any other easy to cook kind of recipes for Iftar items?

Here is something that is fairly easy. Gol guppay.
Just buy the premade gol guppay shells. Make the chana chaat filling. Depending on how much filling you make....it can last you a few days. And then a few minutes before you break fast.....you simply have to crack a hole in the shells...spoon in the filling....put a dollop of yogurt on each shell...and then drizzle with some store brought imli or aloo bukhara chutney.
Sometimes we make a yogurt chaat. Whip the yogurt until it's smooth....add diced tomato, diced boiled potatoes, finely chopped onions, canned chickpeas, seasonings (salt, chili powder, chaat masala, etc), sometimes mint leaves, and pour imili ki chutney on top. It's one of the more healthier dishes and it's filling.
Take some good quality pitted dates. Make a slit in the middle....spoon in some whipped cream and insert a nut such as an almond or pistachio. Place in the fridge to set. If you don't like whipped cream...you can use something like Nutella. When you invite company over for iftar....you can place the dates in the pretty fluted, smaller cupcake holders and it looks really pretty/appetizing.
You can get a loaf of french bread...cut it into slices. Spread some garlic butter on them...sprinkle some cheese...toast in the oven and you've got garlic bread.

Chicken pakoras...you can make the besan mixture with all the spices really thick at first ( we typically use crushed chilli's, garam masala, fresh coriander, dried coriander, salt, haldi, tomato powder, chopped green chilli's and onions) and leave in the fridge...when it comes to making it, just add enough water to thin it out and add diced potatoes and chunks of chicken at the last minute. The thick mixture keeps for a couple of days, so you can add different things into it (just potatoes, or fish, veggie's etc)
Also like redvelvet said, yoghurt chaat is really easy to make and very healthy.
There's a few other recipes I'll be trying out this Ramadan so I'll let you know how they go.
