Easy Iftaar Menu

Hi Guys,

Looking for some menu ideas for an Iftaar that will not require a lot of kitchen time.

So far, I have the following items on my list of possibilities:

Chana Chaat
Is there an easy way to make maash ke dahi baray?
Pre-made samosas fried (or baked - is that even a good idea?)
Pre-made egg rolls fried (same question as above if anyone has baked these things…how they’ve turned out)
Pakoray
Melon Chaat
Baked Chicken
Baked Shami - has anyone done this? Am I asking for a disaster?

I guess less oily stuff but definitely desi items…or ones with a desi twist to them.

Re: Easy Iftaar Menu

I marinated loads of chicken and beef yesterday, divided into portions and threw into the freezer.

-chicken steaks
-beef fillet steaks
-cubed pepper beef (from fauzias kitchen fun)
-malaii boti
-Chicken fingers
-tikka/steam roast
-sajji

My aim is to just do the roti and fruit chaat fresh daily ofcourse apart from thawing a tray of above and throwing into the oven/grill pan.

I’ve not had samosay pakoray or spring rolls in past 3 ramadan so no idea about baking those

Double post

Re: Easy Iftaar Menu

I don’t know about pre-made egg rolls but the once I make at home, I always make bake them in the oven. They turn out fine - I like them that way. I feel when you deep fry them the “sheets” soak up too much oil :bummer:

Re: Easy Iftaar Menu

Sorry…couldn’t resist.

Re: Easy Iftaar Menu

I know many people who bake their egg rolls/samosas…I personally don’t like to because I like getting a nice even golden color which is hard to obtain with baking. :clown:

It depends on what type of wrapper is used. We use spring roll wrappers to make our rolls…baking works fine with those!

Re: Easy Iftaar Menu

I used to make a big batch of mash daal dahi baray and freeze them in small serving sizes. All I had to do was take a small pack, soak in water for few hours, before iftar whip the yogurt and assemble the dahi baras.

To get golden crust on samosas and rolls, leave them in oven for a longer period on 250F.

Re: Easy Iftaar Menu

Reha, mash daal baRay are quite easy,..I just made some yesterday to use during Ramazaan sharif.

I may post the recipe if you want.

Re: Easy Iftaar Menu

That’s smart. My friend had once asked if marinaded chicken could be frozen and for how long.

I am not sure..but rozay nikl jayegay IA :cb:

Re: Easy Iftaar Menu

This is how I make dahi baray

Soak mash daal for an hour. Blend it into a thick paste with little garlic, salt, and little red chilli for kick. Fry the barhas as you fry pakoras on mediumish heat till golden brown. Soak them in room temperature water for 5-10 mins or so. Squeeze the water out of them. Lay them in a dish. Sprinkle some chaat masala. Pour salted yogurt over them and garnish.

Re: Easy Iftaar Menu

That’s exactly how I make my maash ki daal ke dahi barray, except I mix the chaat masala in the whipped yogurt, and being Hydro lol, we add a bhagaar of lasan, karri patta and zeera…it takes it to whole other level lol!

Re: Easy Iftaar Menu

Do you have a recipe for sajji?? I had it in Pakistan and loved it … no idea how to make it though :frowning:

Re: Easy Iftaar Menu

Reha, I bake my samosa the parat walay and spring rolls. Just spray a little olive oil on them and bake them in the toaster oven. They are fewer in calories and just as crispy. You have to turn them after the top is crispy and allow the other side to become nice and toasty brown. This year I am planning on freezing paneer palak samosas, keema egg rolls and chicken veggie rolls.

If those are dates, they look good. The best dates are in the ME.

Re: Easy Iftaar Menu

FISH cakes are my fav during ramzan.

I made a few bunch yesterday and stored in the freezer.

The recipe is very easy.

For 12-15 fish cakes you will need:

-4 big potato boiled but not extremely soft..you need it soft enought to be crushed by a fork but hard enough so it is easily handled

-1 can of tuna

-2 table spoons of sweet corned

-1 cup of gratted cheddar

-1 tea spoon of freshly grounded black pepper

-pinch of salt

-coriander finely chopped

-spring onions finely chopped

-pinch of chaat masala

AND mix everything together to make a firm mix and then make round patties.

Roll each patty in flour, then egg and then breadcrumbs

Fry just like you would fry kababs
