Easy Desi Recipes - A teenager's emergency

Hi human beans, I hope you’re all well. I come in peace.

I’m a part of this “thing”, this"thing" requires me to meet up with like-colored desis and non desis and cook food. I can’t cook for squat. Given my mission, this is a bit of a problem.

Cutting to the chase though, if you kids could give me some easy to make Pakistani/Indian recipes that people of all ethnicities could eat, that’d be incredibly helpful.

To give additional details: we will be making a lunch that focuses on Indian/Pakistani dishes. Ideally the dishes should not take more than 2-3 hours to make, and people should be able to help out in the process of our future disaster.

We have so far decided on samosas and pakoray (balle balle).

err recipes for samosas and pakoras or other stuff too?

for pakoras--besan (or gram flour or chickpea flour in english) mixed with water, and whatever else u want--spinach, onions (sliced thinly), fish or chicken, whatever really. heat up some oil in a deep pan and fry em.

another easy dish is boneless chicken curry, cut up some boneless chicken (or get it cut from teh butcher), fry up some onions and tomatoes and masalas (ur basic desi masalas that are available at non-desi grocery stores are turmeric, red chilli, salt, coriander and/or cumin powder), bhoon it, add a spoon ful of yogurt, mix it, add the chicken, fry it for a few more minutes, and then let it cook on low heat for about 10-15 minutes (boneless chicken cooks realy fast). there will be a bit of gravy at the end, if u want it more soup-y, then add more water and let it simmer for a bit..if u want it dry, put it on high heat , just make sure to stir it so it doesn't stick to the bottom. Serve with boiled white rice or rotis (or pita bread).

Daal--boil some daal/any daal (u can find em in non desi stores too) in water, salt, lil bit o haldi. When its properly cooked and not kaccha anymore (if ure using a regular pan and not a pressure cooker, about an hour), fry up some onions/tomatoes/chilli/coriander (whatever u want) with some masalas and add it to the cooked daal as a tarka.

i will keep it vegetarian.... daal soup, aloo bhujia with pitaa bread, chana chaat with all the fixings, samosay or pakoray.

here's a very simple recipe :

Cream Chicken ... in a blender put two onions, one and a half tsp each of ginger paste and garlic paste , 3-4 green chillies, one and a half tsp salt, half tsp red chilli powder, one and a half tsp garam masala, half cup water ... and blend to a fine fine fine paste ...

then take it out in the pot you want to cook in , add quarter cup oil, half cup double cream and the boneless chicken ... cover it and let it cook for 45 minutes on very light fire .. so you dont have to stir more then 3-4 times in the entire 45 minutes.

When done.. heat up a piece of coal on fire ... and place a cup in the middle of the pot , put the coal piece in it , pour a spoon of oil on the coal and cover immediately. Dont take off the lid for the next 20 minutes .. and make sure you have turned the heat off while doing this step.

Enjoy with naans ... gora's love it , desi's love it even more ...
