easy and yummy recipe of palak
This is my moms recipe and everyone loves it.
Ingredients:
1-1.5lb gosht
2 packets frozen chopped spinach (1lb per packet)
1/2 cup oil (yes 1/2 cup, but you can remove excess after its done cooking)
1 small tomato chopped
1 medium onion chopped
1 tsp white vinegar
1 tsp salt, black pepper, zeera, cumin powder, coriander powder, garam masala and lal mirch powder (if you want it spicy- I leave it out)
1/2 tsp haldi
2 cups water
Method: I don’t know how to use the pressure cooler so I use a regular pot and it takes me about 2-2.5 hours to cook this. But if you have a pressure cooker, it will probably cook in 30 minutes.
Put all ingredients in the pot - everything including the oil. Boil this on medium heat until you see that most of the water is gone. You will need to stir it in between as well. When the water is almost dried up, then you have to constantly stir it. At this point you can add in green chilies. And also add in lots of fresh green coriander. Keep stir frying until all the water is gone and you see most of the oil is gone too. Of course there will still be some pools of oil. I use a large spoon and take out as much as I can. Your palak is ready! This is the best palak I have ever had!

Palak gosht:
Onion
Tomato
Garlic
Meat
Salt
Coriander powder/red chilli powder/turmeric
Put the above in a pot and cook on low until meat is almost completely tender…or pressure cooker for faster results. Add oil at this point and bhoonify the meat a bit until the oil begins separating. In a separate pan, wilt chopped spinach (2 bunches) and then kinda mash together a bit…add to the meat, with some crushed methi leaves + a bit of garam masala and continue cooking. Towards the end (when u can see oil is completely separating) add a big knob of butter. Mix and mix and at this point the palak should be kinda creamy rather than separate leafy…and yeah thats it. The butter really makes it yummy.

I make it with potatos. You need good olive oil because it makes a difference.
Cut small 1.5 inch cubes of potatoes and put some corn starch on them and fry them in 3 to 5 tbsp of oil until they are slight browned up and crispy on the outside. Take them out and in the same oil, fry up a small finely sliced onion, 1/4 tsp zeera, and just before you are about to add the paalak, add in about 4 to 5 cloves of grated fresh garlic (I add more because i love garlic). Now add the washed paalak ( i like baby spinach roughly chopped) and i throw in about 8 to 10 green chili with slits but you can add less or more. Swish it all around for a few minutes, add the salt and potatoes and cook on medium to low anch. Dont overcook the paalak, just enough that the potatoes are cooked and the water has evaporated. I throw in a splash of milk and a pinch of cinnamon powder and let it simmer for a minute. Garnish with cilantro.
