Actually the tava shouldn't be very hot, we make them at home all the time. If the tava is too hot the batter starts cooking the second you spread the batter and forms a dough-like mess!
The tava should be just warm and you pour the batter with a deep ladle right in the center and spread it with the help of the bottom of the ladle in a clockwise circular motion. You spread ghee/oil on the sides and cover it with a lid untill the sides lift-up a little and begin to curl.

Sure CB, you soak 3 cups of rice.. 3 tablespoons of maash daal and 1 teaspoon methi seeds all seperately. In a few hours you grind all 3 together but it shouldn't be a realy fine paste. The batter is slightly thicker than a pancake batter.. before you begin spreading it onto a medium-hot tava mix-in salt and a teaspoon of sugar.
