For your regular masalaydaar salan, does hte size and shape of the way you chop the onions and tomatoes matter for the salan? I heard it can alter teh taste/texture of the salan…true?

I think the size of the sabzi matters since if its going to be big peices then it might not cook properly or might take longer to cook. finely chopped sabzi is much easier to make the salaan.
on the other hand if the size of the sabzi doesnot matter for the salaan then the main importnat thing is that all the sabzi is fully blended....i dont like such salaan where i can see the sabzi swimming in the shorba....i like smooth rich curry

I dont know if it does or doesnt...for masala in my salan I always slice the onions long and chop the tomatoes in small chunks.

Size does matter . In some salans you put chopped and browned by frying and in some you use browned by frying and then make a paste to mix in it in salan. In some salans you add lightly fried onions , and in some you mix raw onions.
All to alter the taste, texture and aroma of that salan. Now do you want me to prepare an Excel sheet to show you which kind of onions go with which salan ?

Honestly for a very long time I have been using my MIL's way fo chopping onions and tomatoes, which is long thin slices of onion and chunks of tomato....I've never noticed a difference though from this way and the way I used to do it before...

It does.
when you grill chicken for instance, are you grilling drumsticks vs full leg and thigh piece determines how the taste is going to be. In bigger pieces, you rely on internal temperature of the stuff. Bigger pieces take more time but cook more evenly.

Lol! but I use that method and so far so good...just wonder how other salans wud taste differently if say I chopped the onions or put it all in a blender first and wonder i that makes a differene or not

Each recipe for each kind of salan will tell you what kind of chopping needs to be done for tomatoes and onions.

oh yeah by sabzi thats what i meant tomatoes, onions....just found it easier writing sabzi :D

tomatoes dont really matter in my opinion however onions do, making a paste from the onions tastes very different to slicing the onions.

I Find it does make a difference, for instant for lamb i always use the chopper for the onions and tomatoes, for chicken i slice the onions and tomatoes (thin), when i want shorba i chop, yet for my karai's I slice, for all my veg dishes i also slice.

I feel i get the gravy either ways sliced/chopped ![]()
Why don’t I see any difference… but i use blended piyaz, tamatar mixture for rajma, chanay etc. & sliced for chicken.
