Cream cheese does NOT freeze well. It loses it’s spreadable consistency. You can still use it in recipes that require cream cheese (I use it in cakes), but prefer fresh over frozen.
Sliced cheddar, if by that you mean processed - it’s okay to freeze - it generally thaws okay (not great) but okay.
