My Ammi used to make her own yogurt…i remember her always having a patila of homemade yogurt in a dark cabinet lol..she’d then strain it all through an old malmal ki sari to get that thick consistency

We do sometimes.

  1. Bring milk to a boil.
  2. Allow milk to cool down.
  3. Add a bacteria culture to it (we just add a few tablespoons of old yogurt that has been stirred to a thinner consistency).
  4. Place it in a warm place (in the oven at about 120 degrees) or on top of the stove on low temp in a water bath. Leave overnight.
  5. When it solidifies, it’s ready to chill in refrigerator. If you want the thicker yogurt, then do as khatti suggested and strain it.

I use dahi a lot…we eat omelets all the time and I use it in there…in cooking…all the time. I’d rather just make it at home…it’ll be cheaper too right?

Can you get the easiyo system in Amreeka? That’s what I use.

You can make plain yogurts the desi style or flavoured with the sachets you can buy.

My mum makes great yoghurt

-Bring whole milk to the boil. (6 pints)
-Let the milk cool to the point to the point it is warm if you dip your finger but not hot.

  • Pour the milk into a stainless steel bartan (almost like the punjabi water carriers) (she bought one specially from pakistan)
  • Add half a pot (300g) of natural yoghurt We go for the thick set yoghurt like Pakeeza in the UK
  • Mix it with a hand whisk for a few minutes
  • Put the lid on and wrap in a warm towel and leave in a warm dry place for 24 hours

Next day put it in the fridge to solidify and hey presto you’re done.

No, but I do recall homemade butter being made in my dadi’s home.

I am more interested in making homemade paneer…for rasmalai. I saw the recipe on the website, Titli’s Busy Kitchen and would like to give it a try one of these days.
