hicken makhan/white chicken
400 grams (14 oz.) of Chicken Thighs or Breast (skinless & boneless)
¼ to ½ cup of Almonds (Baadaam) (grounded)
1 Onion
2 tsp. of Garlic (Lehsan) (crushed)
2 tsp. of Ginger (Adrak) (crushed)
¼ tsp. of Cinnamon
½ tsp. of Turmeric Powder (Haldi) (grounded)
Red Chilli Powder (Pisi Lal Mirch) (to taste)
1 tbsp. of Coriander Powder (Pisa Dhania)
225 gram (8 oz.) can of Whole Peeled Tomatoes With Juice
1 tbsp. of Tomatoe Paste
½ cup of Plain Yogurt
2 to 3 tbsp. of Butter (Makhan)
Note: With chicken there is always a risk of food poisoning, so it is important to clean your hands, board and knives before and after working with the raw meat.
1) Trim and cut the chicken into small cubes, cover and put aside. With a clean knife and board slice the onions into thin wedges (lyonnaise).
2) Heat a large saucepan or frying pan and melt 2 to 3 tablespoons of butter until it is frothy. Add the onions and the cinnamon to the pan and fry lightly. When the onions are soft stir in the crushed garlic and ginger. Then add the turmeric, chilli powder and coriander powder, and sauté over medium heat. The spices are fried first to release their maximum flavour and this really enhances the dish.
3) Add the cubed chicken and sauté stirring constantly until the chicken has turned white. Pour in the grounded almonds, tomatoes and tomato paste. Mix thoroughly. Cover and simmer for 20 to 30 minutes. Add the yogurt and heat through.

Boil the chicken (about 2 lbs) with 4 mediums onions cut and ginger and garlic paste and salt... till onions are all cooked and dissolved. once water is dried add oil in it. Also add white pepper, corriander powder and a little bit of garam masala. Add about 1-1/2 cup of whipped yogurt in it.
Now bhonify it at a medium low heat for a good while, thats what gives it a bit of stickiness that you get on you fingers while eating it. once you see oil separating from masala add about 2 tbs of lemon juice, some finely cut green chillies and green corriander.
and enjoy it's delicious :)

once i saw a cooking show in tv in that they r showing to make white karahi,and the chef told that the white karahi of their resturent is populer ammong people.here is the recipe,i myself try it and it turns good.
heat oil in a pan ,then add boneles chicken fry it well until it water dry the add green chilii paste and tomatoes,cook it until tomatoes tender then add salt,red chilli powder,and add 2,3 tbs of coconut powder it it,cook it for few min ,then add cream in it 2,3 tbs.then add roasted and grounded cumin seeds, corriander powder alomst 1/2 tsp,and black pepper powder, cook it well.then put few spoon of butter in a handi and put chicken in it. in the garnish with ginger slices.
NOTE: I found this on pakirecipes.com, and she was talking about white karahi

dunno but i think shaan masala makes the masala for this. i had it once made with shaan masala and it tasted awful. (not at all chatpata like hyderabadi dishes are supposed to be) ![]()

I'll try out all the diff versions.
The one that I had at my friends house didnt have gravy, just chicken in bhona howa masala and it wasnt the usual curry color orange/red. It was more of a green/yellow color with lots of sabut hari mirchain.

The same recipe i watched too on indus visson and a hotel chef was telling that ,i write down that in my recipe diary and made it ,its good in taste.
