would you emphasize engineering and medicine over fields such as fine arts, law, and economics?
share your thoughts on the correlation that parents always make, between a given field in its monetary worth in pay scale?
would the same be true, when you would have children to guide, about their respective professional fields?

I would say Medicine because it is such a noble field (and not because it pays more). Besides there is a strong ahadith indicating how valuable it is to save a human's life.
But this is just what I'd like, not something that I would force... Alhumdulillah my parents didn't force me to take up a particular career, and I enjoyed that freedom to choose, so I think its the least I could give to my kids (Inshallah).
I would however strongly oppose them taking up degrees where there is a high chance of making money in a haram manner (degrees like finacnce & maths usually result in ppl working in banks/ investment companies).
