Ginger and Garlic is ok to freeze - onions and potatoes a no no. Tomatoes can be frozen too and used in cooking afterwards. I freeze chopped bindi, chopped peppers to be used in omelettes, sliced mushrooms. Easy Peasy!
I used to keep onions in the kitchen cart but ever since my son discovered and liked to play ball with em I decided to keep em in the fridge instead. They stay fine for a couple weeks. These are both red and white onions I am talking about.
I put ginger in the freezer since I hardly use it. I put garlic in the refrigerator. Onions and Potatoes I keep outside unless I am going out of town for a long period then the fridge it is.
