what i've learned is that it is not allowed and one of the greatest sins b/c it would be congratulating/promoting a nonmuslim on his/her sinful/haraam/unislamic/shirk activities. pushing them further into the 'wrong' path away from "truth". this does make sense going by how certain nonmuslim activities are seen right?

Islam teaches that its the only right religion, and groups people into believers and non-believers based on whether they follow Islam or not. Maybe someone more familiar with the history of Islam could correct me, but I am guessing this goes back to when Islam started and the desire was to increase the followers of Islam - the easiest way to do it was to preach that this is the only true religion.

Islam states that it's the only true religion but it also states that people who believed in one God before Islam will enter the paradise unlike the other major religions.

There is enough diversity of thought/beliefs/practices in Hinduism itself, so acceptance of other religions comes quite naturally to us.

No, but I accept and respect that Muslims believe that he was. Same holds true for Jesus Christ. However, I would have no trouble visiting and praying in a Masjid/Church/Gurudwara.

in past, muslim leaders have build mandirs and churches for non-muslims so it shows a lot of tolerance towards the non-muslims.

The big difference is that the Quran tells you that following Islam is the only right way, but Hindu scriptures to not say anything like that. And I don't buy the arguement that Muslims accept and respect what Hindus believe. Maybe some Muslims (Shahrukh & Salman) do but not otherwise :)

If we say that we accept and respect hindus, that does not mean that we feel the same about hinduism too. Yes we respect hinduism but do not accept it. I am not sure why we should apologize for that when its not even a negative trait. You are just presenting it as negative trait.
My parents are my parents and for me, they are the only real parents of mine. I respect other people's parents but dont accept them as mine. Should I apologize for that too?
There is nothing wrong nor offensive if we greet others on any special occasions. In fact it is a ‘good manner’ if we greet. See quoted hadith:
In Book ‘Asking Permission’ of Sahih Bukhari Hadith No. 253k.
**Narrated 'Abdullah bin 'Amr: A man asked the Prophet , “What Islamic traits are the best?” The Prophet said, “Feed the people, and greet those whom you know and those whom you do not know.”

In above hadith we see that the Prophet ordered us to greet people. He did not specify a limit as to whom we should greet. There are different opinions. Some may think that the Prophet only ordered the rules of greeting the non-Muslims for that particular time because of the tension between them and the majority believes that it is still applied to this day. We can greet others as per their belief eg. Hello, good morning etc.
Even if a non-Muslim tells a Muslim the Islamic greeting, the Muslim is still returning the peace of God upon him. So there is nothing offensive in the reply anyway. The Prophet probably stated that Muslims should return the greeting to other Muslims in a better way to increase the love and brotherhood within the Muslim community, as u said above to promote peace and harmony too.
I don't understand why all these non-muslims come to these Islamic based threads and starts to ask "why" and "how" questions, because clearly it is not for the purpose of knowledge, but to criticize.
We believe that our religion is the true religion and we do believe that Christianity and Judism was a true religion because we believe in their prophets. We don't believe in Hinduism but that doesn't mean we disrespect them. It is what it is, don't like it? then keep it to your self. Maybe Sharukh and Salman can give you a better answer
