Dinner for 4 - Ideas?

Okay, its been a long time since i’ve posted here, but i’m back!

Having dinner on Saturday night for another couple and my husband and I.

I’m thinking of doing.. Chicken Biryani, Haleem, Afghani Baigan, Kababs, Salad, Raita.

Any suggestions?

I am also having a brunch/lunch for 4 + 2 toddlers. I am making haleen, roasted/baked chicken, roasted veggies, Mac n cheese, dahi baray, salad, raita, chutney, and naan. So far this is my menu.

I have lot brownies at home and I want to use them for dessert but not sure what to do with them.

Lusi - break up the brownies and make a trifle with pudding.

Are you keeping Nan or some other flat bread part of the menu?

Beamer, I agree with Muslimah…your menu is balanced. You’re not even lacking a vegetable dish. You will of course include bread and beverages. It’s a simple, but filling and scrumptious menu for a small gathering of people. It’s not over-the-top…and adding another dish (IMO) would be unnecessary and more work for yourself. Keep as is and hope things turn out smoothly. :flower1:

Lusi…here’s an idea. Keep the brownies and get a carton of ice cream…maybe a good Vanilla. In bowls (plastic or otherwise) place the brownie, followed by a scoop of ice cream on top. The combo if warm brownie or warm chocolate cake with ice cream is always fun, so you can even keep the brownies warm in the oven.

If you want you could also get chocolate or caramel syrup to drizzle on top. Or whipped cream and marachino cherries, etc. So, a simple n yummy dessert…with minimal work on your part,

Thanks RV but hubster is not a big brownie/chocolate lover. So I need to turn them into something very less chocolaty.

I was thinking of the brownie truffle but not sure if it will taste good.

Lusi - I meant trifle.

This is the trifle i’ve made in the past! it’s really not that chocolate heavy and tastes really really good! I topped it off with heath bars. Tasted really good.

AFayiz - this is what I have. My first time making it :slight_smile: hopefully it turns out good!

Afghani Baigan

Eggplant = 2 big eggplants
lime - 1
onion - 2 small onions
lehson - 1 tablespoon
adrak - 1 tablespoon
coriander seeds - 1 1/2 tablespoon
zeera - 1/2 teaspoon
haldi - 1 teaspoon
tomato - 6
hari mirchay - 4
dahi - 1 1/2 cup
sour cream - the half size container, use all of it
oil - 1/2 cup
namak - 2 teaspoons or to taste
laal mirch - 1/ 2 tablespoon

cut baigan round and fry, remove
add onion, brown it .. add lehson, adrak, namak, lal mirchay, haldi.

dry roast coriander seeds and zeera. after dry roasting, put it a chopper/blender and crush it until it becomes powder. mix this in the onion masala.
add tomatoes to the masala and cook until its soft.
(i like it a little more pasty and so i also used a hand blender)

add baigan to this masala.

mix yogurt and sour cream and add to the masala. add hari mirchay, hara dhaniya and lime juice from the top.. and let it simmer for 10 minutes.

to assemble: put a layer of the yogurt and sour cream mixture on the bottom. add the eggplant masala on top. then top it off with more of the yogurt and sour cream mixture.

Beeamer, hope your dinner went well.
We are hosting brunch tomorrow. I have made Haleem, biryani, aloo methi, and trifle tonight. I have marinated the chicken. Will heat rest of the stuff and bake the chicken and make small Mac n cheese dish tomorrow morning. Oh along with salad and raita.
