Depend upon number of guests, kind of guests, type of event and the time frame one has. Sometimes even depends on weather. What sort if dinner you want to arrange

if you are looking for a desi menu, then I would go with the following menu structure:

A light starter , for example, I usually use phylo rolls almost tiny size filled with mince meat or potato mixture , just two small rolls on a tiny little bed of green salad .. The serving is really small , it should act as a starter ..

Followed by the main course : 2 to 3 salans of choice + one rice dish + Naan
Salan 1 : lamb or chicken karahi or Fish Karahi ( either one )
Salan 2: ideally a vegie dish but if guests dont enjoy vegies then go for koftay or keema aloo or haleem
Salan 3: channa daal
rice option: biryani or pulao

Side dishes:
Salad = can be greens only or separately sliced and decorated or chopped finely and mixed
Grill = you can do a mix grill, like half and half of chicken tikka’s and seekh kababs or just a chicken roast with fries or just plain seekh kababs or tuna kababs or potato cutlets , which ever on you fancy for the day .. choose only one ..

Dessert: cheesecake or ras malai ..

^ I trend more towards heavier menu’s but if you want a lighter menu, then omit the starter round and only go for one salan + rice dish + Kabab or grill

If you want to do a non desi menu, then you can go for the following:

Starter: Olives with feta cheese OR spice and herb roasted potato chunks served with cheese

Main Course :
Lamb steak served with vegie Rosetto and garlic sauce
OR
Chicken steaks served with mashed potatoes and filled Raviolli and BBQ sauce

Sides:
Mashed potatoes
rocket salad
Tuna rolls with garlic bread

Dessert - Cheese cake or Caramel mousse

I have done this menu a few times and people have enjoyed the menu but this one is for light eaters , dont try it out on a couple that you are inviting for the first time ..

Wow!!! Fantastic CB .. No wonder you’re so good at this stuff. It’s supposed to be a desi menu. I was planning on making rice like Biryani and some gravy to go with it and kababs and salad as well. How do you make the salads you mentioned?

Daffy, following are the simplest salad recipes, which ever one you fancy:

Recipe 1: get a packet of Rocket leaves. wash and let them dry. Finely chop some Parmesan cheese just one tsp should be enough. One tsp sugar, some salt and pepper to taste , a tiny tinge of mustard sauce .. Mix and serve

Recipe 2: Mix rocket leaves with chopped in half cherry tomatoes, sprinkled with cheese bits , season with dry herbs ( you get a little bottle in the market ) and lemon juice , salt and pepper

Recipe 3: Get Lettuce leaves , cut them finely in long strings , add chunks of stir fried boneless chicken , some olives, very thinly long shredded carrot , just a tiny tinge of shredded onion. Season with salt and sugar

Recipe 4: The desi salad : finely chop cucumber, carrots, tomatoes, radish salad leaves , onion, add lemon juice , salt and people and mix is really well so much so that you cant separate the tiny bits of salad anymore ..

Recipe 5: decorate a plate with neatly cut lettuce leaves bordering the plate , then fill the middle of the plate with the following :
boiled and finely chopped 2 potatoes, ,finely chopped apple, quarter cup peas, quarter cup pineapple finely chopped .. mix in salad cream and mayo, one tsp sugar, salt and pepper to taste .. mix and let it chill in the fridge .. ready for serving ..

Recipe 6: Pasta Salad : boil some pasta. keep aside. In a pan, add garlic paste in one tsp olive oil, fry it for a few seconds, then add in quarter cup tomatoes chopped .. stir fry until they the water dries, now throw in finely chopped Jalapenos to taste , or, chopped green chillies, or, black pepper powder, or , crushed red chilli bits, which ever you like .. mix it in with salt to taste .. mix in the boiled pasta and keep aside ..

Then boil a potato and chop it in bit size pieces , keep aside . Finally take some green leaves and chop them in large chunks and keep aside , boil some kidney beans or get a can , wash and keep aside.

Now toss all this together, adjust the seasoning and enjoy ..

I love all of them .. 4 & 6 I usually make so will try the others. Was actually in search of such recipes that don’t have mayo or thousand island or such sauces

No mayo or thousand islands sauce is actually easy to manage in many rocket salad or lettuce salad recipes .. you can create a dressing of your choice .. be creative :slight_smile:

For example :

  • A mix of herbs and olive oil
  • A tinge of garlic powder and olive oil
  • Sumac ( a slightly tangy powder used on salad in the Arab world , you find it easily in desi cash n carries )
    -corriander paste or mint paste
  • just fry some onions , drain oil, crush them into fine bits, add in a pinch of garlic powder and add this into the salad with some olive oil .. watch the magic !
    -Jalapeno sauce
  • Cheese melt ( add two tablespoons cheese in half cup boiling milk , salt and pepper to taste ,herbs of your choice, when cheese melts and milk thickens , let it cool , mix mix mix and then add this into salad of choice )

So yeah, there’s loads you can try out
