Ramadan Kareem to u all … im confused what to make for iftar and dinner for my husband and for me…i usually make small proporation of meat so it not get wasted but still i get complains from husband that i make alot of things which then wasted ..i like vegetables but my husband dont like to eat veg so i mixed with meat so plz can u all guide me what to make for iftari and dinner?
I guess make things that can be reheated easily and also taste good when reheated.
I would avoid fried foods since they don’t taste good out of the mic.
I’d try to have a meal plan as well. For Iftari for for two people…you have an option of making a heavier Iftari or dinner. I’d do a nicer Iftari and then for dinner keep it simple because its the last meal of the day and our Iftars are running pretty late these days.
So maybe channay, small portion of boondiyan with it, khajoor and fruit (doesn’t have to be chaat either). But you can use the chanay again the next day and the same with the rest of the items.
It is just hubby nd I this year, so I am trying to make things in smaller portions.
I do not cut the fruit in advance. I just wash and put it in front of us. What ever he picks, I cut it then.
I only bake 2 samosas and 2 rolls. He said he will let me know before hand if he would like more.
For dinner, I have made small packets of ghost and chicken (half of what I would normally make).
Plus, I have made several types of kabobs and frozen them. Thus I could easily bake/fry them if hubby is still hungry. For two people, it doesn’t take a lot of preparation, IMO you can wing most of it.
For dessert, I do not eat it and hubby wan only eat so much, so I send half of whatever I make to my inlaws. However, you could simply make less.

Btw, you can add tarka to freshen up salons. I do not freeze any salons so can’t help u much there, sorry.
However just try to cook in smaller quantity.
i boiled channey and kept it in the fridge for everyday’s use as well as i made samosas and rolls and froze them..i only fry two samosas and 2 rolls and 4-5 piaz pakorey 4-5 aalo pakorey fruit salad for both of us and 2 glases of juice ..i dont make dinner everyday during ramadan whenever my husband feels like having dinner i prepare in small portion what we can use for next day’s sehri but on normal days i prepare fresh food everyday..as mizsani and reha said u can froze shaami / aloo kabab,parathey etc
Most recipes call for 2 lbs or 1 kg of meat. Since I also cook for 2, I usually cut the recipe in half (using 1 lb of meat) and then freeze the leftovers for another night. It usually works out to be good sized portions.
