Tradtional dishes vary from one location to another, city is multi-ethnic and multi-lingusitic, Hindustani dishes like Sooji/Gajar ka halwa to punjabi dishes and afghan dishes of Lajpar nagar market. Delhiwallah’s enjoy gol-gappas of thelawala to the exotic food of hotels. Haleem is tasty though I don’t know if it started from delhi. Origin of Urdu and standard Hindi is attributed to Delhi.
