I HAVE APOTLUCK THIS WEEKEND. there would be 50 people.
can some one tell me something new and unique kind of vege rice. no mtara chawal and no frozen vege packet rice.
and can someone help me how many cup of rice would be enough?

hmm a veggie fried rice?
U can do it with frzen matter/carrots but add some different masalas/flavors? cook it in chicken broth, if u haven't done that before?
you can also use broccoli, onions, carrots, and bell peppers (all fresh), with any diff combo of masalas. for a kick, fry green onions and garlic only (the same way you'd fry reg. onions and paste for any salan)

OK sorry i didnt quite get what you mean by matra chawal but heres my recipe...
an does it have to be veg only....you can take the meat out if you wish...
2kgs rice is enough for 20ppl.....or so....so thats 4kg for you i think.

veg,peans,carots, sweetcorn, mushroom, beans, kidney beans, potaotes,red peppers, green pepes etc anything really!
SALT
soya sauce
MIX MASALA
OIL

ok fry all the veg, and fry all the chicken/keema add salt and masala and boil the rice before hand.add soya sauce at the end.
add the rice to the mixture either in layer format like a briyani or just mix it together...
add soya sauce for bit more culour...
and voilaa looks great, ive made it without meattoo...just buy all sorts of beans and veg...and potatoes...make sure theres some potatoes and also lots of masala to make it nice and tasty..when i mad it alot of people thought it was briyani........:}

I like the veggie fried rice idea. You can add all sorts of veggies like bell peppers, carrots, beans/cabbage/peas/broccoli etc and also spring onions and some scrambled egg into it at the end. Just stir fry all the veggies slightly in a wee bit of oil and maybe some hot pepper spice. Parboil the rice. (kind of like for biriyani). Scramble a few eggs with just salt/pepper. (use little salt as you would add soy sauce to rice later). Then add veggies to the rice & add soy sauce. for about 3 cups of rice i'd use about 1 cup light soy sauce mixed with some ajinomoto(chinese salt). Blend slightly & put in damm for about 25 minutes in the oven. Voila your done!! You can serve with hot sauce/soy sauce etc.

Also if its a Potluck for 50 people, each person will be bringing a dish, so bring only enough for maybe 15-20 people. Otherwise you'll end up with too much food, as people will only take a little taste of everything...etc
Another rice dish is spinach & mushrooms. You need one pack of fresh mushrooms & a bunch of fresh spinach. Parboil rice, for this recipe about 2 1/2 cups rice. Just saute some onions in olive oil till softened, add a heaping spoon of chopped garlic. Stir quickly till garlic is semi brown & quickly add in Mushrooms on high heat. Saute till mushrooms are cooked thru. Season with salt/pepper/red pepper if u like it spicy (maybe add some zeera). Then add in chopped spinach and only cook until spinach wilts.
Add the mushroom/spinach mix to the rice, add about 3-4 teaspoons soy sauce if you like and mix gently. Again put in damm in oven with cover on. Cook medium heat for about 30 minutes. It is very light and different.

Yeah, why not make channa chawal. They are yummy. I love channa pulaao...
Or you could try the lemon and chick pea rice, they look nice.

don't have a tried n true recipe but there's tons out there ....

yes they are cashews, gol mirch, long red mirch. green chili and raisins and soya.
