Classic Banana Bundt Cake by Ira

I made banana bundt cake yest, using a recipe by Dorie Greenspan (book is called Baking) and that is the best anything i have ever baked with bananas. The result was a very soft, banana cake. HEre is a link to the recipe online.

Classic Banana Bundt Cake

Ingredients: Makes 1 Bundt Cake (14 servings)

3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 sticks (8 ounces) unsalted butter, at room temperature
2 cups sugar
2 teaspoons pure vanilla extract
2 large eggs, preferably at room temperature
About 4 very ripe bananas, mashed (you should have 1 1/2 - 1 3/4 cups)
1 cup sour cream or plain yogurt

Center a rack in the oven and preheat to 350 degrees F. Generously butter a 9- to 10-inch (12 cup) Bundt pan. (If you use a silicone Bundt pan there’s no need to butter it.) Don’t place the pan on a baking sheet - you want the oven’s heat to circulate through the Bundt’s inner tube.

Whisk the flour, baking soda and salt together.

Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter until creamy. Add the sugar and beat at medium speed until pale and fluffy. Beat in the vanilla, then add the eggs one at a time, beating for about 1 minute after each egg goes in. Reduce the mixer speed to low and mix in the bananas. Finally, mix in half the dry ingredients (don’t be disturbed when the batter curdles), all the sour cream and then the rest of the flour mixture. Scrape the batter into the pan, rap the pan on the counter to debubble the batter and smooth the top.

Bake for 65 to 75 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Check the cake after about 30 minutes - if it is browning too quickly, cover it loosely with a foil tent. Transfer the cake to a rack and cool for 10 minutes before unmolding onto the rack to cool to room temperature.

If you’ve got the time, wrap the cooled cake in plastic and allow it to sit on the counter overnight before serving - it’s better the next day.

Optional Lemony White Icing:
Sift 3/4 cup confectioners’ sugar into a bowl and squeeze in enough fresh lemon juice (start with 2 teaspoons and add more by drops) to make an icing thin enough to drizzle down the Bundt’s curves.

I did make a few amendments to the recipe for personal liking but the result was divine regardless…

  1. I am a bit reluctant to eat raw eggs (I don’t eat mayonnise at all) even when they are grade-A eggs…That’s why I cooked egg yolks and eugar over a double boiler for about 8-10 minutes and then proceeded as required.

  2. I omitted rum and used a bit of vanilla essence instead in mascarpone cheese mixture as well as in coffee

  3. Didn’t have espresso on hand and I simply brewed 1 1/2 cup of strong instant coffee and used that.

4 cups water+1 tbsp tea leaves+a piece of badaa khatai(flower like herb)+2 cardamoms-boil covered for 13-14 mins.add a cup of cold water&keep stirring-precisely "phaint-ing" till it changes its colour from brown to reddish orange.add milk,preferably evaporated one to make it thicker cuz it doesn't require much milk.simmer for a few mins&serve with salt,sugar&pistachios

Chocolate cake by mano04

Ingredients
1 cup flour
1 leveled tablespoon baking powder
1 cup sugar (take one cup whole grain sugar n then make its powder)
3/4 cup milk
Half cup oil/ butter
2 eggs
For chocolate cake take 1-2 tablespoon of cocoa powder

Method
• Beat the eggs for 2 minutes.
• Sift the baking powder and flour together for 3-4 times (this will make cake soft add cocoa powder into it also).
• Add milk and oil to eggs and mix them well.
• Then add dry ingredients into egg mixture n mix them.
• Put the mixture in greased pan and bake for about half an hour at 180 ̊ C
• Don’t open the oven for first 15 minutes.
For Icing
Melt cooking chocolate over water in a pan. Then mix butter and melt it. In the end add cream and mix it till you get a good consistency and nice sweet taste mixture for icing. Use whisker to mix the contents. You can add honey if you need to make it more sweet.
Cut cake into 2 halves and pour icing on both layers. Then put one layer on top of the other. Decorate with whipping cream or as u wish.

Mango Custard with Chocolate sauce by Shumaisa

Ingredients:

Milk
Mango Custard powder
Cardamom powder
Sugar

Method:

Mix the custard powder into 1/4 cup of the milk. Bring the rest of the milk to a boil. Lower the heat and add the sugar, cardamom powder, custard solution. Mix well and let it come to a boil again, stirring all the time so that it does not scorch. After it comes to a boil again, take it off the heat.

Chocolate Sauce..

Ingredients:

Plain chocolate
Milk
Butter
Whipped cream
Sugar
Vanilla essence

Method :

In a pan heat the Milk and sugar, stirring constantly to dissolve the sugar. Bring to the boil and continue to stir until all of the sugar has been dissolved.
Break the chocolate into small pieces and cut the butter into small chunks. Add to the pan and stir.

Remove the pan from the heat and stir the sauce until the chocolate and butter have melted. Finally, add the vanilla essence and the whipped cream and stir well.

Strawberry Jelly…

Boil 2 cup of water in a saucepan. Measure water exactly. Empty all the packet in boiling water, stir till dissolved. Pour the mixture into a bowl and allow to set.

  • To assemble, arrange strawberry jelly at the bottom of your serving glass.. Pour custard over the jelly and then layer the cake crumbles. Now pour some chocolate sauce. Again layer the cake crumbles and pour some custard at the top. Decorate with chocolate chunks. Cover and refrigerate until serving.

Ingredients:

Brownies
Fresh Cream
Sugar
Chocolate
Barfi

Melt chocolate in microwave and transfer to a mixing bowl with fresh cream. Add icing sugar, Whisk till smooth and thickening.

Take a piece of brownie in serving glass. Top it with whipped cream, crumbled barfi & brownies with chocolate chunks. Then finished with fresh cream and chocolate. Keep refrigerated.

Mango D-Lite!

Ingrediants:
*Mango pulp
*fruit of your choice (strawberries, peaches, bananas etc)
*angel food cake
*vanilla icecream
*whipped cream

Cut up 7-8 pieces of the angel food cake and line up in a rectangular dish; arrange the fruits on top

Soak the cake & fruit with the Mango Pulp and place in the fridge to chill (until ready to serve)

add a layer of the vanilla icecream to the dessert and top off with whipped cream -

Ingredients

Flour (Maidah) 3 3/4 cups
Instant yeast 4 tsp
Milk 1 1/2 cups
Eggs 2 (slightly beaten)
Sugar 1/4 cup
Butter 50 gms

Method:

1) Mix together flour, instant yeast, sugar and butter and then add 2 eggs. Mix and then slowly start adding milk to make a dough.
2) Now cover with a plastic film and rest till it's size increases 3 times.
3) Again kneed to remove the air
4) Sprinkle flour on the rolling surface and roll this dough till its about the size of a "paratha".
5) Cut into doughnuts shape
6) Rest them till they are double in size
7) Deep fry them at medium low flame till lightly golden

Tips and Techniques:

1) The dough will be a bit sticky and very delicate so handle with care
2) Place the cut doughnuts on a tray that has been sprinkled with flour and then rest them before you fry them. Otherwise they will stick to the surface.
3) Melt chocolate for the doughnut decoration at the slowest flame and on double boiler.

a) Melt chocolate and dip cooled doughnuts in it.
b) Then if you want you can sprinkle colored beans etc on top.
c) Doughnut Sandwich: Use a doughnut that does not have a hold in the middle, slice and spread the melted chocolate and make fresh cream flowers around the edges. Place the other slice on top and serve.

** Pineapple Tart**

Ingredients:
1) One packet of Candi Biscuits.
2) One can of sweetened Condense Milk.
3) One can of Pineapples.
4) One packet of Cream.
5) 2 or 3 Sliced Bananas.

Method:
First of all take one packet of candi biscuits and crush them. Then put the crush of the biscuits in the container, and press it. Afterwards, pour sweetened condense milk on the crush biscuits, and on that layer put the sliced bananas,then add cream,and make a layer of pineapples on that cream and put some more cream. Finally, decorate it with pineapples or bananas.

'Strawberry/Pineapple' delight

Ingredients

1 can pineapple chunks
fresh strawberries (if used frozen then well thawed and water squeezed out)
pound/yellow cake
sweetened condensed milk
whip cream
cream cheese (optional)
(I don't use Cream cheese to save some calories since rest of the ingredients are already high in fat).

Mix whip cream, cream cheese and condensed milk. Spread cake in a dessert serving bowl. Layer pineapple and strawberries on top of cake. Lastly pour in the whip cream/condensed milk mixture. You can decorate with some pineapple and strawberries on the top if you want. Served chill.

Banoffee Pie (My fav' dessert - ready-made at Sainsbury's too!)

Serves 8-10. Preparation time: 20 minutes. Chilling time: 1½ hours. Cooking time: 5 minutes

Ingredients

Base:
100g (3½oz) butter
250g (9oz) digestive biscuits, crushed

Caramel:
175g (6oz) butter
85g (3oz) caster sugar
85g (3oz) dark brown soft sugar
397g can Carnation Condensed Milk

4 small bananas
284ml carton double cream, lightly whipped
cocoa powder, for dusting

Method

In a large saucepan, melt 100g (3½oz) of the butter and stir in the crushed biscuits. Press into the base and partly up the sides of a 19cm (7½in) loose-bottomed cake tin. Place in the fridge to chill while preparing the caramel.

To make the caramel, place the butter and the sugars in a non-stick saucepan over a low heat, stirring until the butter melts and the sugar dissolves. Add the condensed milk, stirring continuously, bring gently to boil, to make a smooth, golden caramel. Spread the caramel over the biscuit base and chill for about 1½ hours.

Slice the bananas and arrange most of them over the caramel. Spread with whipped cream. Decorate with the remaining bananas and dust liberally with cocoa powder.

(Sometimes instead of making the caramel, I melt 'Dime' bars or other chocolate bars with lots of caramel in them instead and pour it over the base which tastes so amazing!)

Ras Malai - Original by alishaht - altered a lil’ by Me

Ingredients

Nido milk powder - 1 cup
Oil -1 Tbsp
Maida- 1 tbsp
Baking powder- 3/4 tsp
Egg- 1

Sugar- half cup
Milk- 1.25 litres
Sweetened Condensed Milk- 3-4 Tbsps
Cardamom powder- 1/4 tsp (can also replace by a few cardamom pods)

Process

  1. Bring milk to boil, add sugar and cardamom and let it simmer on low heat, so it reduces a little.

2.Sift all the dry ingredients together and add oil.

  1. Break the egg…mix it all up…but don’t beat it too much…
    Fold the dry mixture and the whisked egg together…DO NOT knead it too much…just mix it all up well..

  2. Make small balls…and mark the ball with a thumbprint in the middle…

  3. Bring milk to boiling point again. Add the balls to the boiling milk. Let it boil for 2 minutes …turn the balls over and cover it and put it on low heat for 5 minutes…Make sure that the balls have trippled in size…

  4. Once the balls are done…add the condensed milk and cook on medium heat for 5-7 minutes uncovered…

7.add chopped almonds and pistachio…and serve chilled…

** Falsay Ka Sharbat **by Bint E Aadam

^ Urdu Recipie

Ingredients
Falsay___ 1 kg

Rose water___half liter
Sugar___ one and half kg
Sweet purple color___ one pinch

Instructions
Grind the falsa in motor and pistol then drain by using a fine piece of cloth.

Separate the extract of falsa and add sugar in the rose water and cook it.

After one or two boils add this liquid into the falsa extract and let it cooked.

Separate the clouds that come over this liquid, when the cloudyness disappears completely add color in it after dissolving the color into water.

After one or two boils take this mixture out and after cooling fill into dried bottles.

** Badam ka Sharbat **by Bint E Aadam

^ Urdu recipe

Ingredients
Almond’s Sharbat
Almond___ half kg
Cardamons ___ 12 nos
Sugar___ one and half kg
Water___ 1 liter

Instructions
Soak almonds in water for one day, peel them off and crushed or grind them.

Add water in it and again grind almonds.

Repeat this procedure 4 times to grind all the almonds completely.

Add grinded almonds and sugar into water and cook this paste.

When it becomes viscous add cardamoms in it and let it cook till it becomes more viscous.

This sharbat is very viscous.

Now take it out from the stove, when it becomes cool fill into any jar.

Drink this sharbat by adding two spoon of this paste into a glass of water or milk. I

t is very delicious and beneficial for brain and heart.

**Sandal Ka Sharbat **bye Bint E Aadam

URDU ^

Ingredients
Sandal wood' powder/ dust___ 125 grams

sugar___ 1 and half kg

rose water___ 1 and half liter

fragrant water(roh kewra)___ 50 ml

Instructions
soak the sandal wood's dust into rose water for 24 hours, then keep it on the fire.

When the water remains only 1 liter after heating take it out and strain to collect the dust.

Now add sugar into this water and heat or cook it again. When it cooks to one third draw it and on cooling

add fragrant water in it and fill it into bottles.

In this sugar 2 bottle sandal wood sharbat will be prepared.

I am always making this delicious dessert at the request of my nieces and nephews.

We love eating it warm with vanilla custard. :biggthumb

**Pineapple upside-down cake **

Ingredients

  • 300g unsalted butter
  • 250g golden syrup
  • 6 fresh or canned pineapple rings
  • 6 glacé cherries
  • 300g caster sugar (grind sugar in blender if you don’t have readymade caster sugar.)
  • 4 medium eggs, lightly beaten
  • 300g self-raising flour
  • 6-8 tbsp milk

**Method: **

  1. Preheat the oven to gas mark 4.
  2. Grease and line a deep 30 x 23cm baking dish or roasting tin.
  3. Pour golden syrup into the tin, place in oven and heat for 3 mins. Tilt the tin to evenly spread the syrup.
  4. Top with the pineapple rings, putting a glacé cherry in the middle of each ring. Leave aside.
  5. In a large bowl, cream the butter and sugar until fluffy. Slowly add beaten eggs until combined, then fold in the flour and enough milk to make a smooth consistency.
  6. Spoon mixture into tin, making sure that the surface is level.
  7. Bake for 40 mins or until golden brown on top. To test, insert a skewer or a tooth pick into the centre – it should come out clean.
  8. Leave to cool in the tin for 30 minutes.
  9. Carefully upturn the cake onto a chopping board. Cut into slices and serve warm or at room temperature.

boil 1.5 litr milk with elaichi and saffron…add in desired amount of sugar and khoya…deep fry bread slices till golden brwn and place it in a dish…pour the milk over the slices enough so tht milk cover the slices fully as bread will soak all of the milk within 5 mins…pour fresh cream over the slices and garnish it with pistachios…serve chilled!
