Here is a recipe I made yesterday, it’s very easy and different. Great if you have people coming over and you don’t want to serve them just a bowl of ice cream!
1 ltr. Ice-cream (I love Straciatella, but you can use any kind, or use two different kinds of ice-cream)
plain vanilla cake
cranberry-compote (or use some jam, cranberry, strawberry…whatever)
cake-mould (rectangular shape)
plastic foil
Take the ice-cream out of the freezer and put it in the fridge, untill it gets soft (don’t defrost it! It just has to get soft so it’s easier to use). Cover your cake-shape with plastic foil and scoop 1/3 of the ice-cream in it. Cut the cake in the length in layers and put one layer in the mould. Again add 1/3 of ice-cream, layer with some compote/jam, another layer of cake and end with the rest of the ice-cream. Cover with foil and put it in the freezer so the ice gets hard again.
When you’re ready to eat your ice-cake, get it out the freezer and cut it in pieces. It looks so good!!! I’ll post a pic later on.
