How can you make desi food taste delicious without adding heaps of mirchain? Please share your ideas, tips, and ticks.

overloading with mirchain is the hallmark of bad cooks, its the easy thing to do, pile on salt and hot peppers and thats hat ppl taste. the delicate flavours of all the other ingredients are lost or subdued significantly.
try making food with fresh ingredients, ginger, garlic, reduce the amount of mirch by half, use fresh cilantro, lemon, tomato etc, u will see yourself.

use slight black pepper....use whole green chilliee and then remove it after cooking........

thats what we eat and still call it desi food :p
You will be surprised to know we don't have lal mirch at home and yes our salan is usually different in color than the usual but we use fresh green mirch and sometimes crushed red pepper if needed!

With little laal mirch and fresh green chillies you can make good desi dish. I used to put lot of spices in desi food but now I use green chillies and it is great.

You could enhance the flavour using other spices.
I for one dont really like too much of mirchein. But i am generous with other spices, garam masala powder in particular.

Examples of desi without mirch or with less of mirch:
- Pulao
- Stew
- Urad ki saadi daal with ginger chunks and onion/zeera fried
- Kitchries (eath them with salad instead of spciy chutnies or achar)
- Loki ka raita
- Thats all I can remember but there are many more.

I am more interested in sharing tips for making regular salans without mirchain. Gia thats pretty much how we make.

If you do not want to use mirchain at all use red food color instead . Since all desi food will not turn out to be as good without mirchain , therefore you have to try on your own by preparing a small quantity first . You cannot serve those foods for parties either.
For example Nihari , Pa-e , Biryani etc can be made without mirchian but they cannot be served in desi dawaats.
