Feeling tired n weak are all results of type II diabetes coz body doesnt convert carbs into energy properly and instead store them as fat. The best diet for type II diebetes is LOW GLYCEMIC INDEX DIET.i.e she should take diet full of fibers, only complex carbs like whole wheat, whole grain, basmati rice ( it has low GI if not lowest of all rices), skip brown rice if she doesnt like it. For roti, use whole wheat with choker, i would recommend whole barley flour ( jo ka atta but whole ) but do check serving size, complex carbs are good but these too in moderation. her diet should mainly be high protein, give her all the veges except potatoes,carrots n some starchy ones,all the green veges are goood for her, give her all fruits except water melon ( very high in sugar),bananase.t.c. Citrus fruits are good, blueberries are good, Refrain from giving fruit juices to her.
give her lean protein i.e chicken more , chickpeas ( garbanzo beans ) are soooooooo good for such patients (very low G.I), kaala chanas are also good n all kinds of daals good too. Dont over cook food, it will increase the G.I in them n try not to use instant food stuff, n canned stuff esp chickpeas.
I am not a doc but i have researched alot and i dont think ur doc is right in suggesting that white rice or plain wheat is fine.Purpose of whole wheat and brown rice n basmati rice is that they are not refined n they contain more fibre and they are complex carbs. body takes more time to break down these carbs so they keep u feel fuller for more time and gives u stable energy n sugar levels unlike refined carbs which body absorbs very quickly n results in sudden rise n drop in sugar level as well as energy level.
As for the Recipes, make a list of GOOD FOOD n BAD FOOD, then prepare the items listed in GOOD FOOD as u like. If she likes desi cooking like roti salan , u can make that using good veges good meat like chicken n sometimes mutton with very less oil like olive oil, just dont over cook the veges and give her this with a small serving of whole wheat or whole barley chapati. Or else u can grill meat with lots of veges. Sometimes treat her with basmati rice ( very small serving ) with the curry, can make for her fruit chat ( just mix good fruits squeeze some orange on it n sprinkle some chat masala) , make chana chaat for her using either chickpeas or kaala chanas with onion n tomatoes n spices n some lemon or vinegar. Vinegar is also good ( acc to sunnah as well )add it to foods to lower their G.I factor. u can do a million things once u figure out good food items for her.As for desert i cant be much help, their are low G.I jams available plus honey is good. U can bake for her using splenda n whole flour rather than refine flour.But always remember give her min carbs n more proteins.

Hope ur mother gets well soon.This Metformin has also such side effects that a person doesnt want to do any thing, makes u sleep more, u lose ur appetite , nausea e.t.c. so check with doc , her dose might need some adjustment.Metformin works best with low carb and high protein intake.If its taken with foods heavy in carbs n oils its side effects increases.And regularly get her sugar levels checked.Do consult a doc cause metformin is no doubt the best treatment available but body takes some time to adjust to it n in some cases its better to start with low dose n work ur way up to minimize the side effects.
