Delicious soup recipes please...

It is very cold outside and hubby and I have the flu. Want to make a delicious and nourishing soup. Would really appreciate so great and delicious soup recipes.

I have two of my favourite soups , sharing the recipe here :

Chicken Corn Soup:

Two cups chicken stock ( I usually save some and freeze and use it for soups ) but if you dont have stock easily available or its too much work , then just mix a few chicken stock cubes in water and bring it to a boil .

One cup frozen corn. crush half cup of it coarsely in a blender. Add that to the stock.
Add the other half cup of corn that you didnt crush , into the soup too.

Chop chicken into tiny bite size cubes. just quarter cup would do. season the chicken with herbs of your choice, or with garlic powder, or with light spices, what ever you prefer. stir fry it and when its cooked, add it into the stock.

by this time the stock will be boiling. mix two to three tablespoons of corn flour in half cup cold water and ensure its smooth. Keep aside.
Beat an egg in a bowl, Some people only use the egg white , but i dont like wasting the yolk so I beat it all up together, add a tiny bit salt and pepper and keeping the soup on high heat , start adding the egg to the soup, but not all in one place , as you drop the egg rotate around the pot so that it starts forming strings .. stir it quickly , give it a few minutes of boiling .. finally add the corn flour .. lower the heat .. dont stir for the first few seconds .. as it starts to thicken, give it a stir once or twice ..

Soup is ready. To serve with condiments you can have soya sauce , finely chop green chillies and add then into the few tablspoons of vinegar, salt and pepper ..

you can serve this with home made garlic bread !

The other soup recipe is the Pea soup

If you can get your hands of some fresh pea pods .. just a handful .. if not, you can do with the frozen peas too.
Boil a cup or two of stock with vegetable cubes or chicken cubes. add in two cups of peas and if you have the pods, wash them, take the peas out and add just a handful like 10 to 12 pieces of them into the soup .. just one carrot as well if you like it , and half a celery, no more.

bring this all to a boil. until the vegies are nicely cooked. Now, if you have a liquidizer, you can use that or wait for this entire mixture to cool down a bit, add it all in a blender and turn it into a very fine paste .. peas, pods, carrot, celery, should all turn into a fine paste ..

When done, pop it back into the pot and keep on medium heat, if its too thin consistency , then feel free to add one or two tablespoons of corn flour mixed in half cup cold water .. if its too thick , then add quarter cup milk to it ..

if you like you can season it with herbs of your choice .

Serve it with a blob of creame Fraiche or double cream on top , salt , pepper and herbs ..

Garlic bread to go with the soups:

crush a spoonful of freshly crushed garlic .. or just take a frozen cube of garlic, defrost it. Mix it with two tablespoons of softened butter, add in two tbsp olive virgin oil. add in herbs, half tsp , salt to taste .. mix and keep aside .

If you can get a baguette chop it in inch thick pieces. if you cant get a baguette, then take the usual white bread.

Heat up the oven on grill function to 200 degrees. pop three to four slices of bread into the oven, keep a hawks eye on it, coz you are only trying to crisp the top end under the grill .. as soon as the top starts getting color and turning crisp, take out the bread pieces .. flip the bread side and give a thick layer of the garlic spread you made earlier.. pop it back under the grill. Will take about a minute or two and you will notice it will start crisping up and browning.

Take it out, cut it into strips and enjoy with the soup ..

I also make something similar to your recipe above, and just tweak along with other ingredients that I have available.

My children like barley, so I pressure cook barley (the quick cooking kind is awesome), and throw that into my soup. Also can add diced potatoes towards the end for a variation. If I want the soup to be extra filling, I’ll make a dumplings mixture, and spoon those in towards the last 15 minutes. Can also boil pasta, like orzo (look like grains of rice), or some other shape , and add to the soup.

Tomato-Lentil Soup

-saute one medium onion in a pressure cooker
-add 2-3 cloves of garlice
-add one 28 oz. can of fire roasted diced tomatoes (fire roasted gives the best flavor)- if you want a smooth consistency, blend
-add ~7 cups of water
-add one cup lentils (masoor)
-1/4 cup rice (I usually add soaked wild rice may substitute regular rice or another grain)
-1 tsp. cumin powder
-1 tsp. coriander poweder
-salt to taste (around 1.5 tsp)
-chili powder to taste
-cook in pressure cooker
-add lemon juice to taste (or balsamic vinegar)

  • add chopped parsley to garnish

Hey Baji, I make lentil soup too, its so tasty :yummy:

but I dont add tomatoes to it.. this is how I make it , just sharing for variation purpose:

boil two cups of orange daal, in chicken stock .. keep boiling until its completely smoothed out. you can use the blender or the liquidizer as well. when done, in a frying pan, take half tsp garlic paste and saute it along with some fresh corriander, just three to four twigs .. and mix this into the daal .. again use a liquidizer to ensure no bits remain and its all a fine thin paste ..

Finally season the lentil soup with salt, mixed herbs about two tsp .. double cream blob in the middle of the serving bowl and you are good to go ..
This tastes lovely with the garlic bread ..

the idea is to enjoy the simple taste of daal , without any onions or tomatoes or the desi way of cooking daal ..

meeep! i made beef soup a few days back. i followed this bbc recipe and kinda had to cut some stuff out because i didn’t have it at home but it still tasted lovely! the peppery-ness made my insides warm. had it with croutons and my sister made bread so it was good for the cold weather.

Ingredients

[li]1kg/2lb 4oz braising steak or venison[/li][li]2 tbsp plain flour[/li][li]vegetable oil[/li][li]2 medium onions, diced[/li][li]4 medium carrots, diced[/li][li]2 celery sticks, leaves and all, diced[/li][li]1 red pepper, seeded and diced[/li][li]5 garlic cloves, crushed[/li][li]4 tbsp good sweet Hungarian paprika[/li][li]2 tbsp caraway seeds, crushed[/li][li]60g/4 tbsp tomato purée[/li][li]3 bay leaves[/li][li]2 litres/3½ pints good beef stock[/li][li]4 potatoes, peeled and chopped into small cubes[/li][li]flaked sea salt[/li][li]freshly ground black pepper[/li][li]soured cream and flat-leaf parsley, to garnish[/li][/ul]

Preparation method

[li][COLOR=#333333]Trim the meat and cut it into bite-sized chunks. In a large bowl, mix the flour with a teaspoon each of salt and pepper. (i didn’t have any beef stock so used chicken stock which worked just as well, didn’t have paprika, bay leaves or sour cream but again it’s really a flexible recipe and i like my soups with a lot of flavour and some spice so i added extra black pepper plus i don’t like it too watery so i let it sit for a while too)

Black Bean Soup with Chipotle Chiles: Recipe: bonappetit.com

I make it with 2-14 oz cans of black beans OR if from scratch I cook the beans (soaked O/N- and washed multiple times) in the pressure cooker for 30 min with only a bit of salt and then add the rest of the salt after the beans have cooked. I add a little hing at the beginning with the onions because I heard that if prevents gassiness and one family member always has this problem.

Thanks cb! I tried the chicken corn soup and it was awesome. I never blended the corn before. It made a big difference. Also I added some veggies to stock. I had these in the fridge already. I put big pieces and then tossed them out and just used stock.

I learned from experience it’s important to use bones for good stock. I have made stock from boneless chicken breasts and it doesn’t taste as good.
