i know bout goll gappaz......equal quantity of maida and soojee ...kneed with water.....roll the dough in a form of a very very patlee rotee then cut out the gool shapes with some sortta cutter then fry in hot oil ....and i dont know about the khatta panee(imli walla) ask someone else bout it.......:)

I guess khatta paanee is made from tamarind juice, a little bit of red chilli powder, chat masala and salt...I'm sure you can get a can of chickpeas too from a suprmarket..:)
Dahi Baray
Ingredients
2 cups dal maash dhuli (white)
presoaked for 4-5 hours
Pinch of baking soda
1/2 tsp salt
pinch of heeng
Grind the presoaked dal into a paste and add rest of the spices.
Mix well and leave for 30 minutes.
Then in a frying pan add 1 tbs of oil and with the help of a spoon drop into the pan flat rounded pattis and shallow
fry til light brown.
DO NOT TURN OVER TO FRY OTHER SIDE.
Meanwhile heat oil for deep frying and then deep fry.
When golden brown remove and cool.
When serving, soak in a bowl of water and when a little soft squeeze out the water between palms and add to prepared yougurt.
YOGURT:
Beat the yogurt adding a little water to a paste.
Add salt, red chili powder and 1/2 tsp zeera powder.
Garnish with sweet Imli Chutney and Chat Masala.
Gol Guppay
Ingredients
*Gol Guppay: *
1 cup white flour (maida)
1/2 cup sujji (semolina)
The dip:
Red chili powder to taste.
1/2 bunch fresh mint leaves
1 heaped tsp zeera
Salt to taste
1 pinch black salt (kala namak)
2 glass Water
2-3 green chilies
1/2" piece fresh ginger or 1/4 tsp grinded.
1 tbs Tamarind paste
1/2 tsp Ajwain
Method
Mix the white flour and sujji and kneed
into a hard dough. Flatten into a VERY
thing sheet and cut into 2" diameter
circles with a cookie cutter.
Deep fry until golden.
Grind all the ingredients for the dip
together and strain. Keep the liquid
that strains through.
You can either have this dish plain or
you can boil some chickpeas and
potatoes and stuff them into the
Gol Guppa. There are several other
variations as well. You can add
Imli chutney and yoghurt as well.

instead of makin the dip urself, get shan masala wali gol gappay masala thing, it tastes like the one in pak...
