24 hours should be the maximum really but you can get away with a bit longer depending on the type/joint.
Should be more than enough

I would only risk it for 24 hours, it must be marinated though. Im sure you could leave it for 48 hours too if you really didnt have the time to cook it. I wouldn't though.

I dont freeze meat to be honest with you. MEat is readily available for us, so we buy it as and when required.
Dont like the taste of frozen meat - the taste changes.
Another thing I do is partially cook the meat - that way you can keep it in the fridge for a few more days, and then cook it proprly when required

I'd say about 24hours too. Try not to defrost meat until the day that you are going to consume it.
