defrosted chicken -what to do?

Hi guys,
What should I do if I dont need the entire pack of chicken breasts but cannot seperate them to take how much I need until its all defrosted because it hasnt been packed well -is it ok to keep the pieces I dont need (but have been mostly defrosted) in the fridge and use them the next day or what should I do? You are not supposed to refreeze defrosted meat right?

Yes you should never re-freeze any uncooked meats. But its ok to leave it till next day or 2 in your refrig, just dont let it go any longer than that...better to cook it sooner because once its cooked, THEN you can re-freeze.

^ to add to that, for next times as soon as u buy the chicken (assuming its fresh?), separate em into individual size portions right away, its still better to defreeze more than 1 packet than to have to defreeze a large portion..

Marinate the rest in yougurt and some masala (even tikka masala) it will stay in the fridge for a few days if you dont' need it right away....

I know, thats what I always think I should do, but I hate touching it and try to minimize and delay the touching as much as possible. Hmm maybe I will buy a box of surgical gloves!

Thats what i do midnightes - i have box of 50 surgical gloves and handle meat with them on...otherwise i get the meat smell in my hands....shudders
