try mixing with dal mash flour , half amount besan and half amount dal mash flour. you can buy it in desi stores. I also sometime add a pinch of baking powder. Do you rember to soak them in water before puting them in dehi?

another trick is to phaintofy the besan well....

I make them with just mash kee daal. If you have mash daal power you can use that other wise just soak the daal for atleast 30mins. Blend the daal in a thick paste, add some ginger/garlic paste, salt and peper to taste. Fry them till golden brown, then take them out and soak them in room temerature water for 10-20 mins. Then take them out and carefully squeeze the water out of them. Lay them in a dish, sprinkle some chaat masala, top it with whipped salted yogurt, garnish with chaat masala/dahibara masala, chilantro, or chtuney (whatever you like)
