I need a step by step recipe of how to make dahi bhalay including the bhalay’s… and ofcourse a list of ingredients.

afaaf , we have two dahi ballay recipes in the "Ramadan Special - Recipe of the day " thread .. its on the top. Please can you check in that thread .. Diamond and I have both posted recipes of Dahi ballay just yesterday ..

i have a very simple recipe...soak some white daal for couple hours. Then blend it. I add little salt, pepper, and garlic paste for flavoring. Mix it and fry them like you fry pakoras. The only think is don't add too much water when blending. the water should be only half inch above the daal in the blender.
When they are done, take them out and soak them in water. When soft, lightly/softly squeeze the water out. lay them in a dish. sprinkle some chaat masala, pour yogurt, and garnish!

Dahi Baray Recipe

Ingredients

2 cups dal Maash dhuli (white) or Moong (dhuli) presoaked for 4-5 hours
Pinch of baking soda
½ tsp salt
pinch of asafetida (Heeng)
1 tsp. ginger (Adrak) paste

Instructions

Grind the presoaked dal into a paste and add rest of the spices.
Mix well and leave for 30 minutes.
Then in a frying pan add 1 tbs. of oil and with the help of a spoon drop into the pan flat rounded patties and shallow
fry till light brown.
DO NOT TURN OVER TO FRY OTHER SIDE.
Meanwhile heat oil for deep frying and then deep fry.
When golden brown remove and cool.
When serving, soak in a bowl of water and when a little soft squeeze out the water between palms and add to prepared yogurt.

YOGURT: Beat the yogurt adding a little water to a paste.
Add salt, red chili powder and 1/2 tsp zeera powder. 1 tsp corn flour and 1 tsp sugar
Garnish with sweet Imli Chutney and Chat Masala.

why would you add corn flour in yogurt?

Corn flour may add some aromatics into your senses...lol

Well...if you first make the corn flour slightly warm in a frying pan or something...then let it cool...and then add it to yogurt...should smell pleasant... :)

I got a receipe from an aunty from pakistan. she is very good cook.

Dal Mash 1 cup
Channa dal 1/2 cup
soak for 2 hours

grind the bove dals in grinder alot adding:

1 spoon red chilli
1 spoon salt
1 tea spoon ajwain

grind alot again
if too thin add few spoons of basan and than grind again alot

(she said the trick is in grinding alot)

than deep fry these bhalas.

dont change sides alots

in a pot pour warm water with 1 spoon suger and 1 spoon salt

dip them for few min till soft
change side
dip again

gently press with your finger and
put in dahi

my SIL uses besan, mixed with water and a little chilli powder, and jeera. Make it into a medium consistency and add a little baking powder.

Then fry the dumplings - cold water till soft.. bung in yogurt, sprinkle with lots of chaat masala

Am I the only one who adds onions, tomotoes, boiled potatoes etc in Dahi Bhally?

Since the daal ones take time I once froze them and just soaked them in warm water before adding in the yogurt but if I am in a rush I just make the besan ones and add baking soda in it to keep them soft from inside!

I also add tomatoes, potatoes, onions...even channay.... otherwise i think it's to plain.

So in essence it's chaat with dahi bhalley in it. :D

no, that is punjabi way of eating them. I remember whenever we visited our nani ama in faisalabad, she would get this sort of dahi baray and they were delish!

yeah i too freeze them and then soak them in warm water.

ohhh dear , so my poor hubby was correct all along :naraz: … he is a pakka lahori and kept telling me that dahi ballahs have channay and boiled potatoes in em as well … I told him off everytime :no:
