Anyone have a tried and tested awesome daal recipe?

I need as many variations of daal as possible and good ones too!

Super easy and probably you already use this one.

One cup of masoor ki daal
A small handful of channe ki daal
A small handful of mong ki daal

Soak them all.

Add water in a large pot, bring it to boil, add daal, salt, chili and one spoon of premade masala you like, I usually use Tikka boti or Qorma masala (sounds weird, but it’s good). Let it cook. (or in a cooker, I don’t have one)

Once done, do the tarka (I don’t know the urdu word) with oil/ghee and garlic.

yes I got many daal recipes.

masoor ki daal , I dip it in water for half hour then drain it in a pot I add daal, chopped tomatoes, salt, red chilli powder and turmeric powder , let it simmer on low heat till it is cooked properly, you can dry extra water or whtever consistency you like. then give tarka fry onions, zeera and chopped garlic and whole red round chilli. in the end top it wth chopped coriander

daal makhni: boil both black lenti and kidney beans and keep it, in a separate pot fry bay leaves, zeera add chopped onions fry then add gingergarlic paste fry it for a while add tomato purree fry then add in daal and kidney beans mash little bit of it add spices salt red chili powder and pinch of turmeric add in cream mix it well let it simmer on low heat finally just before serving add in butter and chopped coriander

My dad loves fresh pyaaz ka bhagaar in all his daals and I find that it really enhances the flavor of any daal.

fry moong ki daal:
Boil Daal adding little salt .

In a wok prepare the bagar :

Add 2 tablespoons of oil, add bay leaf till it turns slight brown
Add zeera until it starts popping
Add onion, garlic and saute till golden brown
Add tomato, mix till you can some oil left behind and the tomato is fully mashed
Now add haldi, red chilli powder, zeera powder,
Add ginger paste
Add pepper and mix well.
Add dhanya powder
Close the lid and let the mix cook for 2-3 minutes
Finally add moong daal and mix nicely, add little water and leave it on sim for 5 minutes.

Garnish with dhanya patta and serve Hot

dont all these daals cook at different rates? by the time chana daal is cooked, masoor would be liquid.

Ingredients:
1 cup moong daal
handful of masoor deal
½ medium onion
2 tomatoes
5-10 curry leaves
1-2 teaspoon rai
1-2 teaspoon zeera
few cinnamon sticks, cloves, black peppers etc (gram masala)
ghee/oil for tadka
3-4 green chillies
ginger garlic grinded 3-4 table spoons
turmeric 2 teaspoons
salt to taste
red chilli powder to taste

I boil the daal and chopped tomatoes in the pressure cooker, then add red chili powder, salt, and turmeric. I then add all the gharam masala and onions in the ghee. I fry it until the onions are golden brown. I add the ginger, garlic, and green chillies and fry a few mins. I add this to the daal and it turns out very good. I get requests when throwing a dawat to make it.

^ I forgot dhaniya powder, which I add at the end and let it simmer for few mins.

Maash ki daal:

Fry a bunch of crushed/grated garlic and ginger. Add chopped tomatoes, salt, turmeric/red chilli powder/dhaniya powder/bit of fresh ground black pepper. Bhoonify for a bit…add washed and soaked maash ki daal. Add double the volume of water to the daal (1 cup daal, 2ish cups water) and let it boil on medium-high until the water is almost all evaporated, stir the pot constantly so the daal doesn’t get stuck to the pot. Or use a pressure cooker but u only need a bit of water and a small amount of time on pressure. Add chopped green chillis and green onions and a bit of fresh dhaniya. Done.

Maash ki daal. Followed above recipe, but omitted tomatoes. Hope hubby likes it :slight_smile:

simple paalak daal

1 cup masoor dal
I chicken bouillon (maggie)
1 onion chopped.
1 med tomato chopped
Large handful of baby spinach or if u can find khaata paalak (gongura or ambara leaves)
Haldi, crush red pepper, Lehman adrak

For bhaghar…ghee, zeera, rye, Karri patta lehsan slit hari mirch

Heat oil and saute onion until light brown, add tomatoes and haldi with legs an adrak and bhoonify. Add the chicken crushed bouillon along with red pepper flakes and swish around just to incorporate it all. Now add the daal with 3 cups waters. I just add water by andazaa. Once the daal is almost cooked… add the spinach leaves and look for 5 to 8 mins. For the bhagaar, heat ghee or butter a tbsp or two and add the garlic, zeera, rye, and green chilis last.. let it crackle and sputter and add to the dal.

(I usually add more namak.. and about 3/4 tsp red chili flakes.)
