im forever getting confused about various cuts of meat and their use in desi cook in particular …
can we plz compile a list of commonly used cuts of meats, translation in urdu and their best use in desi or non-desi cooking.

A lot of the cuts listed above don’t really have a place in desi cooking though :hmmm:

Like brisket..it’s not just seenay ka meat like used in salans…it’s actually the undercut from the breast/lower chest. It’s a boneless cut, with a lot of connective tissue, and the fat cap is left on to keep it moist. It has to be braised, and cooked for a very long period of time on low heat, or else it just gets stringy and tough. I’m not sure I’ve ever seen this cut applied in desi cooking.

Or the different types of roasts…chuck roast, top round, rump etc…when making a pot roast, you need to know the differences, but in Indo/Pak cuisine, I don’t see these terms or cuts used at all

There ae some other names also
Blade steak
Round eye steak
Topside steak (i think its good for pasinday and bihari kababs)
Tender chuk (dont know for what is this used)
T bone steak,
Y bone steak etc

i agree khatti … thats why I said best use in desi or non desi.
Many of us on this forum are into non-desi cooking too i think so i think it might be useful info.
My butcher (halaal) has all of the cuts listed above … he is a non-desi (not pakistani, indian or bengali) though and his employees are hispanics … so I literally am :rotato: at the time of orders.

Ok, lemme go through the list then and comment on the best uses for the cuts…I’m sorry, I thought you were inquiring only about uses for desi cooking :smack:

Can I ask a question..what will you say to a desi butcher when you need rib eye steak..??How will you explain it in Urdu?I have never had issues getting certain or particular cuts of meat from him,but I am not sure what to tell him over the phone when I order some rib eye steak.

ahhhh exactly why i started this thread … hoping someone knows the urdu names for some of these or perhaps a longer/wordier explanation that can be given to the butcher. I’ve shown images pulled up from the net in the past … it works sometimes.

undercut-for stir-fried meats as far as I know..baqi sub meray liay ‘gosht’ hai without any discrimination :hehe:
