Is there a difference in taste when you use crushed red pepper vs. finely ground one, for salans and things? Which is better?
Re: Crushed or powder?
I might be wrong, but I think the powdered pepper is more hot than the crushed one...
I personally like the 'look' of crushed red pepper flakes in certain dishes ,so that's why I use it...
Re: Crushed or powder?
I used crushed for sabzis and powdered for curry type salans.
Re: Crushed or powder?
What's the difference?
Re: Crushed or powder?
The crushed is random hotness...the powder blends in giving consistent flavor. I like the way it looks in sabzi.
Re: Crushed or powder?
I use crush for karhai, pakoray etc. and red for gravy and such.. just because I like the way it looks :$
Re: Crushed or powder?
I LOVE crushed pepper in my omelets.
The difference is exactly how Nikki described it to be. Crushed pepper gives you random hotness and that really festive look in dishes. The powder delivers mirch consistently in the masala.
Re: Crushed or powder?
I always use powdered. I feel that it gives a nice colour to your meal.
Is 'deghi' mirch the same thing as powdered mirchi?
Re: Crushed or powder?
no deghi mirch is a bit more bright in color and gives more reddish look to your food and i think they are made from kashmiri lal mirch may be ?
Re: Crushed or powder?
I have seen Chef Rahat use the kashmiri mirch many times. According to her, it gives a nice taste and color.
