Re: Cottage Cheese.

I use cottage cheese instead of ricotta cheese in my lasagna - I like the texture. I also like cottage cheese with fresh fruits like pears, apples, strawberries and grapes.

Re: Cottage Cheese.

You can make qalaqand with it.

Re: Cottage Cheese.

Here is the recipe for qalaqand.
You might have to try the following recipe a couple of times to get it right. If you get it right first time you are the winner.

250 ml whole milk
250 gm =Cottage Cheese or Ricotta Cheese
120 gm sugar-powdered
1 tsp Kewra water ( or Rose Water)
1/2tsp green cardamoms powder
a round mould to set it in, or a serving dish, if you do not want to shape it like a cake
Almonds-shredded and roasted, to garnish

Instructions:
1. Take a heavy bottom pan and put it on heat.
2. Add the milk and then add the Cottage Cheese or Ricotta cheese ( use your hands to crumble it)
3. Cook slowly until the liquid tends to thicken up.
4. Add sugar and keep on cooking, till the mixture is thick.
5. Remove from heat and transfer it into a plate for seeting
6. Add some Kewra Water ( or Rose Water) for fragrance.
7.Sprinkle some cardamom powder on top.
8. Sprinkle some cut almonds on top.
9. Leave it to set.

Put in in the fridge to cool down.
