hey guys,
when trying to thicken a sauce the recipe calls for a mix of equal parts corn starch and cool water…then mix it into the hot food, let it boil, and it thickens…right? i tried this and for some reason my sauces dont thicken properly or at all…what am i doing wrong?? even this happens when i make custard sometimes ![]()

You may not be using sufficient quantity of corn startch. Boil it on high flame afterwards.

may be not enough corn starch. try to make the misture with thicker consistency, i have tried this and don't go crazy stirring unless you think the dish you are cooking is burning, let the corn starch do its magic.

firstly, add lesser water when mixing the cornstarch ... can you check if the corn starch isnt too old? coz it doesnt work much if its a year old ...
secondly, Dosa is right , if you stir too much , it wont catch momentum.. so just stir it with a light hand .. and keep it on medium flame ...
Thirdly, if you still feel that the curry hasnt thickened enough, stir two more tablespoons of corn flour in a tiny bit of water and mix it in ... until you get a thick curry ...
