cooking without cooker

i dont have a cooker…i used to make shami kebabs in cooker in pak but now i couldnt make them in normal nonstick cookware…
so people who are making shami kebabs without cooker… i want the exact measurements for 1kg beef
*how much water should i put to make meat tender
*for how long do i have to keep meat for boiling
*what about the flame

I think you will make the shami kebab mixture in exactly the same way you learned before. Then use frying pan to shallow fry the kebabs in oil.

No boiling needed.

Tell us how you used to make them, and what problem you have frying in nonstick pan.

i just cant make the meat tender enough for kababs.....
i put meat,channay ki daal,ginger/garlic paste,garam masala,redchillies,salt,black pepper,zeera(sometimes) 2-3 cups water for 1kg beef and that mixture in cooker was ready in 20mins....but here in nonstick pan the water evaporates n meat is still very thick to chop....i put this mixture for 2-3hrs n keep on adding water again n again.....

^Buy a pressure cooker then. Alternatively, you can add one or two kiwi fruits in mince and daal, kiwi is a great tenderizer.

u dont want to put water in frying pan, use oil, medium heat and turn the kebab after it has set on one side. (3 minutes?) should take 7/10 minutes for each kebab depending how fat you made them.

You have to make smaller quantity like 4/5 kebab at a time so they are all sitting in the frying pan and not overlapping. You can not put the whole 1kg meat and mix at once.

Hope that helps. They will be a different type of kebab that your used to with more crispy outside.

Pressure cooker would help, or buy a mini oven

She's not asking about how to make a kebab. She's asking about the mixture of the shami kebab and how to make that mixture.

Yeah, your best bet would be to buy a pressure cooker. My mom has a pressure cooker and she always makes the shami kebab mixture in that. Comes out lovely.

^^ ok if you dont have pressure cooker or mini cooker then use a boiling pan for the mixture not a fry pan? or even a microwave will work to cook the mixture first.

i cant buy pressure cooker actually when my husband will be in mood he'll buy...u know.....lol
i use boiling pan n not a frying pan....i was asking if anyone has tried to make the mixture without pressure cooker

Lower the heat, VERY VERY LOW and cover the pot, let it simmer and at occasional intervals take a masher/hand mixer and mash/grind the mixture. Continue this until you find the right consistency. If the water keeps evaporating, add more by cupfuls.

akmoti one tip by chef zakir, when adding water to such things don't add cold water. I believe he said it stops the cooking process. Add boiling water (you can boil water in electric kettle or in microwave). Hope this helps as well.

I have a fear of using Pressure Cooker. Ive heard horrible stories.

What other options do i have? How long will chicken/mutton/beef take to become tender without the cooker?

^i also went thru an accident with a pressure cooker as i was always cooking in it before marriage but it saves time :/ i was using cooker with rubber ring in pak.....n now m planning to buy one without ring....hope it works out well....

without cooker:
chicken 15-20 minutes
beef 1-1.5hrs
mutton 1-2hrs

I can go through that duration but will prefer not using the cooker. I know of at least 3 cases of very experienced females in my family who went through horrible PC accidents.

i did it!!!
2cups hotwater for 1kg beef...cooked on low flame for about 4hrs n its done!!

A Tip by ZUBAIDA APPA for tendering the meat
When cooking meat add a match stick or Spoon in the pot it tender ur meat fast.

Explanation : add the match stick / metal spoon when u r done with ur gravy/after adding spices and everything and about to cover the pot / deghchi and don’t forget to throw it out, before serving :hoonh:
