Quite some years back my dad switched to butter/ghee and animal fat for cooking to help with his cholesterol and high bp and everyone thought he was crazy. Now it's more accepted that these fats are healthy for us. I really like Max Lugavere's work into foods for brain health.
I stopped doing any deep frying years back because I hated the mess and having to deal with the leftover oil. Olive oil has a lot of stuff we need but should be drizzled over salads etc, not heated. When cooking, butter/ghee is all you need. I use a small knob for making fried eggs, larger amounts in salan. I only keep a bit of rapeseed oil for frying my very fussy son's chicken bites (I don't use more than 2 tablespoons in a good frying pan).
and what about the ‘fact’/‘myth’ that desi ghee/butter litteraly clogs up your arteries? Keto people are swearing by the goodness of animal fats…the general medical community still asks people to restrict animal fats…its all confusing.
As Mademoiselle pointed out, the medical community for a long time had scapegoated eggs as causing cholesterol which we no know isn’t true. We also now know that refined carbs are a huge contributor to all the type II diabetes we are seeing and that it’s possible to reverse it with a low carb diet - another thing the medical community claimed wasn’t possible for a long time (my dad reversed his). The medical profession doesn’t really know what causes plaque build up and because of the risks of not sorting it out asap go for medical intervention. You can’t really say to a patient “you’re at risk of a heart-attack but how about we try changing your diet, getting you active and reassess in two years”.
There needs to be a lot more work on prevention, which is only really starting to happen. It’s a lot easier to give people pills for anything than to ask them to make huge lifestyle changes, which honestly, our societies are not set-up for anymore with convenience being king.
I think the only real issue with ghee and animal fat is the calorific content. It’s easier to get too many calories if you’re not careful which is an issue itself. And also what you are eating. I bet ghee is conjuring up images of parathas and halwas, when really we are talking about frying eggs, sauteing vegetables etc.
^ So true about eggs. But what can be the easy way to "make" ghee?
Occasionally we use grass-fed ghee and butter. I don't drink milk very often, but I prefer grassmilk when I do. Also use olive/coconut oil occasionally. And then there's the dreaded canola oil that I've spoken of replacing, but we haven't gotten around to it yet. There was a report a few years back about the majority of olive oils on the grocery shelves not being legit and a test had eliminated many names and narrowed it down to a handful, so I picked one from the there.
Well on animal fats I have seen many people dying of sudden heart attack as they have been eating all sorts animal fats almost on a daily basis - things like Nihari, paya, magahz, kaleji and some of them died at the age of 40. Animal fat could be good for you if you do a lot physical work! It is really too dangerous!

But there are few types
Specified that need pure one as there's many weird ghee
dalda ghee which is mixture of everything is not even ghee
Pure ghee is from grass fed cows and has it's own smell and taste on it's own
I can't image using ghee for normal cooking/sauteing, the taste is purely different. I feel we should get most of our fat from vegetarian sources.

However it seems like the professional themselves are confused. lol. Dr. Malhotra is blaming other physicians and WHO. Im sure WHO issued that after being reviewed by a bunch of doctors.

Even professionals can be wrong. Just because a majority of doctors claims something doesn't necessarrily mean it's right. Besides, doctors don't really get taught much about nutrition anyway and I read somewhere it takes 15+ years for new research evidence to go mainstream.
We may be screwed but also fortunate to have access to so much research so we can make up our own mind.
