I will start by sharing mine ... One of the biggest mistakes I was constantly making until a few months back .. I lacked patience ... starting from the beginning to the end , I would try to get the food doen in under and hour and quickly used to put ingredients in one after the other ... and then complain why my food would get the look or the taste :(
Until I realized one day that when i cook on slow heat , and the process is slow , the food comes out tasty ... so I started to be more patient ...and took the following steps :
1- waited for the oil to be really hot before adding onions in ...
2- remained patient for the onions to go brown naturally rather then doing them on high fire !
3- waited for the masala to release oil , instead of hilla hilla ki masala ki jaan nikaaling !
So yeah .. patience paid in the end !

I cooked moong ki daal a few days back and I over cooked it…daal ka bharta ban gaya tha but the taste was fine ! My dad like always appreciated me
and my mom did neither appreciated nor complained:salute:

Diamond , did you look back on the cooking process and realize what the mistake was? you reckon you will be able to avoid the mistake the next time you make moong daal? ![]()

^ yea I added a little extra water than it was required to cook and since it was supposed to bhi a bhuni moong ki daal the daal became way too soft while drying the water completely.
and I attribute this mistake of mine to my mash ki daal ki recipe that I follow. Since moong ki daal takes much lesser time to cook than mash ki daal I added the same quantity of water as I put in mash ki daal ![]()

ohhh dear , I thought so too … But yeah now that you know what happened , you will be able to rectify when you make moong daal next time inshallah … I had that same issue twice with the daal ! once i added extra water … and it became watery … next time i didnt add water more then two tablespoons and it didnt cook well enough ![]()
So now , I keep an eagle’s eye on the daal and add water bit by bit until it cooks up and is the right consistency ![]()

and you know my mom added palak in the left over daal and made a yummy daal palak mix

Baking. I could never get my bread to bake right, and the texture of cakes would always be rubbish. The solution was simple, read and follow the recipes exactly because baking is a science and you can't just ad lib the ingredients the way we do when we make salans and what not.

Buttered and floured the cake pan TOO much and got my cake stuck to the pan. It was a challenge getting it out. Buttering and flouring a pan before putting the cake batter in helps getting the cake out, but not if you over do it.

Wow, I have made so many mistakes, too many to name actually.
Overcooking daal is one of them, lol, adding to many spices, so much so that I overwhelm any other flavor the dish had going, adding too much oil, adding too little oil, too much salt, too much amchur, too much red chilli powder, not enough salt, bland tasting soups, undercooked rice, mushy overcooked rice, rotis which turned into papads. Lol you name it, most likely I've done it, but alhamdulillah, I am finally making delicious dishes everyday, and you know what they say practice makes perfect, and every mistake you make is a mistake you will learn from.

I was always making soggy yakhni pulao...purely because I did not want any left over,so would add all of it and then the rice would go all mushy.
Now,I add it spoon by spoon and if there's any left,I make into soup,but it's rare.So lovely khushke chaawal...:)..dana dana ek.

wow … I can never get my pulao to look like dana dana alag :no: … I mean they are not perfect , nor too mushy .. they are just in between … I dont like em :no:
But will try your trick with em .. might help me too ![]()

i actually like knida mushy rice, i don't like rice too dry!
