Cookies

I tried a couple cookies recipes and would like to share them on demand. The recipes were taken off of recipezaar and hence they are not originally mine. Please post comments if and when you try these out. Also, I am stating the recipes as mentioned at recipezaar. If i made substitutions, i will list them in parenthesis.

Crispy Coconut Cookies

1 cup shortening (part butter)
1/2 cup brown sugar
1/2 cup white sugar
1 egg, beaten
1 tsp almond essence or coconut extract (i used vanilla)
2 cups sifted, all purpose flour
1 tsp baking soda
1 tsp cream of tartar (i think this is wat is called tatri in Pak)
1 cup dessicated coconut

  • Cream shortening and sugar.
  • Add beaten egg and extract.
  • Sift flour, baking soda, cream of tartar and add gradually to the creamed mixture.
  • Add the finely dessicated coconut and mix thoroughly.
  • Roll into small balls, put on a greased cookie sheet. Press down with a fork.
  • Bake for 15 mins at 325. Cookies should be nicely colored.

These were pretty soft and chewy.

Chocolate Chip Cookies

1.5 cups butter ( i use part oil)
1.25 cups white sugar ( i used 1 cup only)
1.25 cups brown sugar ( ditto)
2 tsp vanilla
2 large eggs
4 cups flour
2 tsp baking soda
1 tsp salt
4 cups swirled chocolate chips (i used 2 cups of milk chocolate chips)

  • Preheat oven to 350 degrees.
  • Mix butter, sugars, vanilla and eggs.
  • Stir in flour, baking soda and salt.
  • Stir half of the chocolate chips in to this.
  • Drop dough by rounded measuring tbsps, about 2 inches apart pnto ungreased cookie sheet.
  • Place the remaining chocolate chips on top of the cookies.
  • Bake 9-12 mins or until lightlly browned.
  • Cool slightly before moving to a cookie rack.

These came out very soft, chewy and chocolatey even with the reduced amount of choc chips. My cousins ate a huge plateful and were happy to take some home with them. My co-workers also loved these.
