Ok Monk, here’s the easiest answer to your question mate :
For Aloo gosht salan :
Pressure cook the meat for 30 minutes.
Potatoes, say one medium potato cubed into four pieces , should take about 15-20 minutes of cooking time on the stove. So After bhooning the meat and adding water , you chuck in the potatoes and let them cook covered. That is how much time the potatoes usually take in almost any combination.

if preparation time for dish is not counted …which includes peeling, cutting, washing etc
for red daaal… agr ap pressure cooker may rakho to almost 10min and then for cooking 25min
for aloo… if its aloo anday and bhujia…it takes 25 to 30 min… varying on size of potatoes and thickness of slices of it…
for egg plant more than 1 hour if cooked along with aloo …baigan aloo… bcz we have to fry egg plant slices first.
beef more than 35 min i guess…pahla gosht ko bhonta han then wo thora soft hta h then make salan
