Re: Competition - The Best Pulao

hand written recipe main kuch “apus ki bateen bhi likheen hain” so cant scan it

Sorry for the delay. Here it is

Ingredients

  • Chicken 0.5 kg (she has also made it with goat, so you can use whatever but I normally use chicken)

  • Basmati Rice 0.5 kg or little more

  • Ginger paste 1 tsp

  • Garlic paste 1 tsp

  • yogurt 1 cup

  • Onion 1 (medium)

  • Milk 1/4 to 1/2 cup

  • Red Chili 1/2 tsp (as per your taste)

  • Salt 1.5 tsp (or as per your taste)

  • Coriander pwd 1 tsp

  • Turmeric 1/2 tsp

  • Cumin powder 1 tsp (better if you used roasted cumins)

  • Black pepper 1/2 tsp

  • Garam Masala including Cinnamon, Cardamom, Clove, Cardamom, Bay leaves (you can use whole or powder) - I used powder

Procedure

  • In a pot cook chicken with all the red ingredients in almost 2 cup of water. Make sure that when chicken is tender, 1-1.25 cup of broth should remain

  • Boil rice with 2-3 tsp of salt. Make sure not to over boil it. rinse when 1 kani is remaining and then pour milk in rice

  • Now spread yogurt over the cooked chicken and then layer the rice on the top

  • Spread some food color over rice

  • Golden brown onion in almost 0.25 cup of oil and pour/spread onion with oil on top of rice

  • cover and simmer for almost 15-20 min

  • Mix and serve

I like this because its yummy and it takes only 30-40 min to cook with very little mess.
