Hi All , with winter approaching us … time to look out for soup ideas … please share your soup recipes here .

**Carrot and Corriander Soup

**- Heat 1 tbslp olive oil in a pan and saute 4 spring onions ( finely chopped ) for a minute until softened but not coloured ..

  • Meanwhile grate two large carrots add to a pan with 1 tsp honey and one lemon’s juice, stir to combine

  • Pour 450mls of chicken stock ( you can use cubes ) in a panand bring to boil, add in the carrot mixture prepared above and boil for further 5 -10 minutes until carrots become tender , stir in handful fresh corriander and then blitz with a hand blender until smooth …

Season to taste with salt and black pepper …
While serving add a swirl of extra virgin olive oil on top and serve with garlic bread …

I typed out the whole thing and accidentally x-ed it out :crying:

Ok so, 1st one:

1/3 cup channa daal, 1/2 cup masoor and 1/4 cup sabat moong
1 chicken stock cube
1/2 tsp salt, 1/2 tsp lal mirch, 1/4 tsp haldi, 1/2 tsp coriander powder and 1/2 tsp zeera powder
1 cinnamon stick and 3 garlic cloves
boil it with the water a few times. cant say how much water exactly but it shouldn’t be more than 1-2" above the daal, even as a soup I don’t like it too thin/watery…when boiled, lower the heat, cover, and let it cook for an hour ro so, checking up and stirring every few minutes
When done, remove the cinnamon and garlic, and for tarka, I fried half an onion in a lil bit of olive oil, and mixed it with the daal. It was actually meant to be eaten as a salan but I didn’t feel like having roti or rice, so I just ate it alone.

2nd–1/2 cup moong daal, and 1/4 cup masoor
same as above, except no cinnamon or garlic…
made a tarka of zeera powder and mashed up garlic…

3rd–was a package I bought…split pea soup..it was cut-up channa dal, dried peas (not sure what its called in urdu), barley and quick cooking oats. it came wiht a seasoning packet that included haldi, salt, paprika, dried up celery and carrots (yea it sounds weird but it tasted pretty good)… the cooking directions were same as above.. but in the end, I did a tarka of garlic and added a liiiiitle bit of cream..

4th–chicken oat soup–I had this at a friend’s house and I made it again at home…it was great!
2 chicken drumsticks (or any bone-in pieces would work), 1 cup brown rice, and 1 cup quick cooking oats
2 cinnamon sticks, 4 cloves of garlic, half an onion cut into thin slices if desired
Boil the chicken in a bit of water, with garlic pieces, salt, coriander and cumin seed powder and 1 cinnamon stick
when boiled, seperate the stock and chicken pieces, discard the garlic and cinnamon stick, shred the chicekn pieces when cooled and keep to the side
in the meantime, boil brown rice (that has been soaking) in the stock with 1 cinnamon stick…add more water if needed
when rice is 3/4 done, add the shredded chicken and some time after that, add the quick cooking oats. (if using regular oats..you boil it with the rice)
after about 10-15 minutes, the soup should be ready..if you want to make a tarka, fry up the onions and 1 mashed garlic clove and season wiht salt and pepper.

Super lovely recipe … Most of the recipe is similar to how i make it , just that I boil 3-4 slices of onion along with the daals .. nd later use a liquidizer to turn it all into a smooth paste .. tastes awesome .. its one my favourite soups :lifey:

The awkward thing is once i served this soup at a formal desi gathers … and they ended up asking me "daal kis ki saat khain bi " :frowning: since that day i dont do lentil soup for desi’s :naraz:

heheh. its an acquired taste I suppose, us desis...have to have some carb wiht everything :p

but ooh, one of the soups..i actually ate it with toasted bread, it was YUM!

yup, I serve most of the soups with garlic bread or croutons ... lentil soup always with crunchy croutons .. and it always tastes yummy ..

^ if you avoid the tarka and minimize the bread, I dont' see why it shouldn't be.....

I posted the recipe for cream of roasted red pepper soup a long time. I've made it several times and it turned out well. The flavor sets in and gets better with each day...cuz it's a tomato based soup.

I do want to try and make a tortilla soup one of these days. I've had it at CPK and it was delicious. I'm also curious about French onion soup...but have never tried it.

Creamy soups would not be that suitable for diets.

French onion soup serves our asian tastebuds very well :cb:

I had it once at a restaurant and the flavour was a bit too strong for me … but if we can lighten it , then it could be one of the best things ever …

Diamond , here’s a super easy recipe for you :

Chicken Corn Soup

**Boil 4 cups chicken stock ( you can use chicken cubes as well ) … normally what I do is chop boneless chicken into small bite size strips .. then start boiling them in the stock … they get done in 10 minutes .. you drain them out and keep the stock separate …

In a frying pan, add in half tsp garlic chopped or paste .. along with one tablespoon oil … after a minute add in the chicken bits that you have kept aside .. fry it on high heat so it gets browned slightly … keep aside

Now get two cups frozen corn … use half of them first , pop them in a chopper and turn them into coarse bits .. ( 3-4 runs in the blender are fine ) .. add this to the stock and put the stock on low heat … add the rest of the corn in the stock without blending it … boil this for 15 minutes …

Add chicken pieces into the stock .. and after a minute , add in salt and blackpepper and herb (optional) … check the taste .. if all is good then beat an egg and add it slowly into the stock .. do not stir immediately .. give it 30 seconds and then stir lightly …

Then dissolve two to three tablespoons of cornflour in half cup cold water .. and mix this into the soup … after a minute of cooking check the consistancy .. if its thick enough , take it off the heat and serve hot .. if its still too liquidy , add a bit more cornflour after dissolving it in some more cold water …

Enjoy …

Serve it with soy sauce and green chillies chopped and dipped in white vinegar
