hahaha, so I bought a lot of cod fish fillets, and tried using badshah fish masala mix on it, with some mixtures of masalas in addition to that, and although it came out pretty decent, I had a problem with the texture.
I fried the fish, and it was pretty hard.
Any good tips on specifically working with cod? I think it’s one of the more oily fish…
you can make this fish pie I do - it's really yummy and works with pretty much any fish.
Chop and fry an onion or two, then fry the fish in a pan along with some spices - I use salt, kali mirch, red chilli powder, sabaz mirch finely chopped. While you're frying, break up the cod into lots of little pieces. The fish should be like a dry, spicy mixture. I sometimes add lemon juice too to give it a different flavour - up to you.
Get a baking dish and layer the broken fish at the bottom.
Meanwhile, boil some pasta and aaloo (in separate pans!) Drain the pasta and layer on top of the fish.
Make some white sauce (melt butter and add equal amount of flour - e.g. 100g butter/100g flour - then slowly add milk and keep stirring until it becomes a sauce and the lumps are gone, then add grated cheese at the end to make it yummy and cheesy - add kaali mirch to taste) Add a layer of this white sauce to your fish/pasta dish
Finally, get the aaloo, layer on top of your fish dish (I usually slice them sideways) and sprinkle grated cheese on top - bake in the oven for 15 mins or whatever, till the cheese melts.
